The present research is based on a critical review of the bibliography deposited in scientific databases, whose objective is to identify the articles that answer the clinical question: Does nutritional intervention influence the improvement of symptoms in patients with osteoarthritis? The NuBE (Evidence-Based Nutrition) methodology was used. Through the information search, 55 articles were found in PUBMED, MEDLINE, COCHRANE, DIMENSIONS, selecting 31 articles that have been evaluated by the CASPE critical reading tool, finding several with sufficient levels of evidence to be included in the therapy of patients with osteoarthritis. , following the researcher's experience. The critical comment allowed us to conclude that the nutritionist has a very important job in patients with osteoarthritis, contributing to weight loss, and through nutrition the nutrients that positively intervene in the pathophysiology of the chondrocyte and synovial membrane are available.La presente investigación tuvo como fin establecer la capacidad antioxidante en un pan enriquecido a base de cacao. Se elaboraron dos tipos de formulaciones de dicho pan. Además, se cuantificó las propiedades organolépticas: gusto, estructura, aroma, coloración y elegibilidad. Para esto, se contó con la participación de 100 panelistas no entrenados, los cuales pertenecían a la Escuela Académica Profesional de Nutrición Humana de ta Universidad Privada Norbert Wiener y se utilizó un rango hedónico no estructurado con puntuación del 1 al 5. Por otro lado, se determinó que son iguales respecto a la intensidad del: color, textura, aceptabilidad, pero con diferencias en cuanto al promedio entre los dos tipos respecto de la intensidad de sabor.
