The objective of this study was to determine the total polyphenol content, antioxidant capacity, proximate composition, and protein digestibility of the red and black varieties of native Peruvian ñuñas. The total polyphenol content was quantified using the Swaint and Hills method, expressed in mg of gallic acid equivalent per 100 g of sample; antioxidant capacity was measured using the Arnao, Marino, and Cano method, expressed in micromoles of Trolox equivalent per 100 g of sample; proximate composition and digestible protein were measured using the Max Becker method, expressed in grams per 100 g of sample. It was found that the total polyphenol content is 41.87% higher in the red variety than in the black variety; the antioxidant capacity of the black variety was 35.13% higher than the red variety; the proximate composition is similar in both varieties, balanced and suitable for a nutritious diet; and the protein digestibility of the red variety is 2.47% higher than the black variety of native Peruvian ñuñas. It is concluded that ñuña is a functional food due to its nutritional and antioxidant properties, with good digestible protein content and antioxidant activity.
