Publicación Acceso abierto Influencia de la alimentación en la fosfatasa alcalina en personas de la tercera edad de la casa hogar San Martín de Porres, año 2017(Universidad Privada Norbert Wiener, 2019-09-23) Cardenas Cahuana, Liz Faviola; Parreño Tipián, Juan ManuelThe research, titled "Influences of Diet on Alkaline Phosphatase in Older Adults at the San Martín de Porres Nursing Home, 2017," had the objective of determining the influence of diet on alkaline phosphatase in older adults at the San Martín de Porres Nursing Home. The study used a quantitative, deductive approach, a descriptive-correlational level, a non-experimental cross-sectional design, and a basic type. Additionally, the visible spectrophotometric method was employed to establish the levels of alkaline phosphatase in each of the 66 blood serum samples analyzed. It was concluded that a significant relationship exists between diet and alkaline phosphatase, with a correlation coefficient of 0.715. Consequently, diet, eating habits, and the consumption of alcohol, carbonated beverages, and coffee significantly influence alkaline phosphatase. Results: 39.39% of the total sample of older adults had high levels of alkaline phosphatase. Regarding eating habits, 42.42% had high consumption of dairy, 43.94% of meat, 39.39% of fish, and 42.42% of foods of plant origin. 39.39% also had high consumption of alcohol, carbonated beverages, and coffee.
