Ítem Acceso abierto Evaluation of the acceptability and total iron content in gummies developed with guinea pig blood(Universidad Privada Norbert Wiener, 2023-06-15) Chauca Guzmán, Jorge Dilan; Inocente Camones, Miguel AngelThis thesis aims to develop chewable gummies made from guinea pig blood containing a high iron content and good acceptability. Three specific objectives were set: to determine the production process for the gummies made from guinea pig blood to ensure good acceptance by adults, to determine the iron content of the gummies made from guinea pig blood to prevent iron deficiency anemia, and to assess the nutritional value of the gummies. The research method is hypothetical-deductive analytical because it involves the development and acceptability of a product mainly made from guinea pig blood. The approach of this research project is quantitative as it focuses on objective measurements and statistical analysis, and the data will be collected through surveys. The type of research is applied experimental because it aims to solve a specific problem. The design of the project is prospective and transversal as it will begin to be conducted, and data will be collected over a set period. A hedonic sensory test was applied to adults residing in the district of Villa El Salvador in the province of Lima, Peru. The study sample consisted of 100 adults. Guinea pig blood gummies were made, and a hedonic sensory test was applied, which included preference and acceptability tests, with result sheets as instruments. The acceptability test was used to define the taste, color, sweetness, and texture of the three formulations made. A 5-level scale was employed: I dislike it a lot, I dislike it a little, I neither like nor dislike it, I like it a little, and I like it a lot. A validated survey or questionnaire was used for data collection. The sensory test concluded that there were differences among the three formulations, with formulation 1 being better accepted by the panelists.
