Publicación Acceso abierto Efecto antibacteriano in vitro del extracto etanólico de tres variedades de semillas (blanca, roja y negra) de Chenopodium quinoa (Quinua)(Universidad Privada Norbert Wiener, 2025-07-01) Herrera Manrique, Marion Consuelo; Viera Chambergo, Yasmin Ysbeth; Félix Véliz, Luis Miguel VisitaciónAntibiotic resistance is alarming worldwide, with Staphylococcus aureus, Escherichia coli and Pseudomona aeruginosa being fundamental protagonists of this phenomenon, given the aforementioned reason, the work aims to: To demonstrate the in vitro antibacterial effect of the ethanolic extract of the three seed varieties (white, red and black) of Chenopodium quinoa (quinoa). Methodology: quantitative approach, explanatory; seed population (white, red and black) of Chenopodium quinoa, sample was 1 kilo of Chenopodium quinoa for each type, petri dishes were used which was distributed of 3 plates for each biological strain and non-probabilistic sampling by intention. Results: anthocyanins, saponins, flavonoids, among other metabolites, were identified. At the microbiological level, significant inhibition halos of (p<0.05) were evidenced with 9.29 mm (red quinoa), 8.76 mm (white quinoa) and 9.57 mm (black quinoa) against Staphylococcus aureus, on the other hand, no significant halos were evidenced against Escherichia coli and Pseudomona aeruginosa front, only halos of 8.35 mm and 8.46 mm were evidenced for white and black quinoa respectively. Conclusion: The ethanolic extract of the three varieties of Chenopodium quinoa seeds (white, red and black) was determined to have an antibacterial effect in vitro.
