Publicación Acceso abierto Actividad antioxidante del extracto etanólico de la raíz y el fruto de Euterpe precatoria Mart. "huasaí" procedente de la provincia Maynas y Chanchamayo(Universidad Privada Norbert Wiener, 2019-11-12) Hernández Cerna, María Elizabeth; Garamendi Alacote, Carmen Rosa; Peña Suasnabar, Carmen GladysThe process of extracting palm hearts from Euterpe precatoria Mart., 'huasaí,' kills the palm tree. This produces agro-industrial byproducts that should be utilized as an alternative for the root. Objective: To compare the antioxidant activity of the ethanolic extract from the root and fruit of Euterpe precatoria Mart., 'huasaí,' from the province of Maynas, relative to the species native to Chanchamayo. Methodology: The research design was quasi-experimental. The content of total phenols was determined by the Folin-Ciocalteu method, and antioxidant activity was determined by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) method. Results: For antioxidant activity, linear regressions were used to obtain values for the half maximal inhibitory concentration (IC50). The 'huasaí' root from Chanchamayo and Maynas obtained an IC50 of 3.28 µg/mL and 3.86 µg/mL, respectively. The antioxidant activity measurements were contrasted using analysis of variance, Tukey's test (p<0.05), and the Student's t-test. Significant differences were found at the 5% level between the groups from the two provinces and for the three samples. Conclusion: The ethanolic extract from the root, epicarp, and mesocarp of the 'huasaí' fruit from Chanchamayo had greater antioxidant activity than the ethanolic extract from all the Maynas samples.Publicación Acceso abierto El etiquetado octogonal de los alimentos sobre la promoción de la salud, en residentes del distrito de "Mi Perú", 2020, Lima 2021(Universidad Privada Norbert Wiener, 2022-01-25) Tello Bueno, Roxana Janeth; Peña Suasnabar, Carmen GladysThe objective of this research was to determine how octagonal labeling on food products relates to health promotion among residents of the Mi Perú district. A questionnaire was applied to a sample of 376 people who accessed social media. Results: 96% of respondents were aware of the topic of octagonal labeling, and 90.6% understood that they were warnings. 57.26% stopped consuming a product after reading the octagonal label. Additionally, 93.3% reported being concerned about their health, and 92.2% stated that the labeling had a positive influence on disease prevention. Conclusion: People understand the meaning of octagonal labeling, considering them warnings placed on packaging to prevent future diseases. Despite a consistent consumption of these products, only a minimal percentage reported doing so every day. Furthermore, respondents were concerned about a healthy diet, and more than half stopped consuming a product after reading the label.
