In this context, the present study aims to: "Determine the in vitro effect of ethanolic extracts of mango epicarp (Mangifera indica) on the growth of Escherichia coli and Salmonella enterica". Methodology: Hypothetical deductive method, quantitative approach, type applied, experimental design of cross section, explanatory; population of 10 kg of fruits and sample of 2 kg of epicarp of Mangifera indica. The phytochemical procedure consisted of a preliminary qualitative screening, while the microbiological analysis corresponded to the diffusion in agar through wells, 10 petri dishes were used, which were distributed in 5 plates for each biological strain. Results: The phytochemical analysis showed the presence of phenolic compounds, alkaloids, α lactones, β-unsaturated compounds, tannins, anthocyanins and flavonoids. On the other hand, the microbiological analysis showed inhibition diameters of 7.89 mm (25%), 9.17 mm (50%) and 14.69 mm (75%) against Escherichia coli and 6.9 mm (25%), 9.79 mm (50%) and 13.81 mm (75%) against Salmonella enterica. Likewise, statistical significance (p<0.000) was found between the experimental and control groups. Conclusion: The ethanolic epicarp extract of Mangifera indica L. showed antibacterial activity in vitro against Escherichia coli and Salmonella enterica at concentrations of 50% and 75%.
