Ítem Acceso abierto General acceptability and caffeine quantification of an energy drink with residual coffee pulp.(Universidad Privada Norbert Wiener, 2020-04-30) Salca Quispe, David Brayan; Inocente Camones, Miguel AngelObjective: The objective of this research work is to evaluate the amount of caffeine and the level of acceptability of an energy drink made with residual coffee pulp. Materials and methods: The study is cross-sectional, prospective and analytical. Three formulations of different concentrations were prepared: formulation 1 (40% coffee pulp), formulation 2 (60% coffee pulp) and formulation 3 (80% coffee pulp). A hedonic sensory test was applied to determine the characteristics of smell, color, flavor, appearance and acceptability in 100 adults of both sexes from the district of Villa el Salvador. Results: The formulation containing 40% coffee pulp has the highest acceptability in all attributes, while the caffeine content was determined through the AOAC method and was 41.2 mg in 100mL of sample. Conclusions: Through the sensory test, it was concluded that there are differences between the 3 formulations, in which formulation 1 had better acceptability by the panelists.
