The research method was hypothetical-deductive and of a basic type, with a quantitative approach, a non-experimental design, and a cross-sectional scope. The population consisted of adults aged 40 and over, with a sample of 180 adults residing in the Lince district. The results showed that the most frequent age range was 40–49 years, and the most frequent gender was male at 71.7%, compared to 28.3% female. Regarding knowledge level, 31.1% had a low level, 53.3% had a medium level, and 15.6% had a high level. For vitamin consumption, vegetables were consumed at a high level (78.3%), while Vitamin A was the most consumed vitamin by type at 88.3%. Based on the analysis, it was concluded that a strong positive relationship exists between the level of knowledge and the consumption of vitamins that support the immune system against the COVID-19 pandemic in the Lince district from 2021 to 2022.
