    Pasta enriched with yacon (smallanthus sonchifolius) in glycemia of patients with HIV, type 2 diabetes from Hospital Chulucanas, Piura

    Methodology: This is an applied study as the results will help companies use yacon in the pasta industry to prevent diseases. It is quantitative and experimental, involving the preparation of pastas enriched with yacon flour to measure its effect on blood glucose in a group of patients with the proposed diagnoses, aiming to investigate whether the variables affect the dependent variable(s). A pre- and post-test design will be applied with two different groups. Results: There is a difference between the blood glucose values of HIV-infected patients with type 2 diabetes after consuming yacon-free pasta and those who consumed pasta enriched with yacon flour. Conclusion: The results determined that there are significant differences in blood glucose values between HIV-infected patients with type 2 diabetes after consuming yacon-free pasta and those who consumed pasta enriched with yacon flour. The subsequent consumption of yacon-enriched pasta in the dietotherapy treatment significantly influences blood glucose control in HIV-infected patients with type 2 diabetes.
