The objective of this study was to evaluate the anti-anemic activity of Negra Collana variety quinoa flour (Chenopodium quinoa Willd) and Ramis variety kañihua flour (Chenopodium pallidicaule Aellen) in anemic Holtzman strain rats. The methodology involved obtaining extruded flours of quinoa and kañihua, performing a proximal composition analysis, an acute toxicity test according to the Williams criterion, and a histopathological analysis. Experimental anemia was then induced in rats, and an effective dose was determined. Finally, anti-anemic activity was evaluated for 12 weeks. Results: The flours showed high protein content (22% for quinoa and 16% for kañihua), and both were safe and harmless according to the acute toxicity test. Experimental anemia was successfully induced in rats with hematocrit levels < 33% and hemoglobin < 11 g/dL. The effective dose was 360 mg/kg of quinoa and kañihua flour. In the evaluation of anti-anemic activity, an increase in hematocrit levels of 24.5 ± 0.5% and 22.1 ± 0.3% was observed with quinoa and kañihua flour, respectively, after 12 weeks of treatment (p ≤ 0.05). Conclusion: The oral administration of 360 mg/kg every 24 hours of quinoa and kañihua flour with vitamin C over a 12-week treatment period showed anti-anemic activity in anemic rats.
