Con este propósito, se utilizó una metodología fundamentada en el método analítico – sintético, con enfoque mixto, basado en una investigación que se califica como aplicada, y un diseño de investigación cuasi experimental. Los resultados muestran que los valores medios de pH fueron 3.9856+0.023 y 4.2372+0.024 para las bases parcialmente secas y frescas, respectivamente, con rangos de confianza estrechos. La acidez titulable arrojó promedios entre 1.0567+0.23657 y 1.3428+0.17139, presentando variaciones significativas entre las bases. El contenido de humedad mostró disparidades sustanciales, con valores promedio de 5.4622+0.29666 y 82.6222+0.79852 para muestras parcialmente secas y frescas, respectivamente, mientras que la proteína y la grasa demostraron grandes variaciones en sus concentraciones entre las muestras. La ceniza exhibió un grado modesto y bajo de fluctuación en sus concentraciones en las bases. Ambas muestras exhibieron cantidades mínimas y altamente concentradas de fibra. En conclusión, los hallazgos enfatizan las disparidades sustanciales en los atributos del yogur probiótico con quinua entre las bases parcialmente deshidratadas y frescas, revelando variaciones notables en sus características. Se observan mayores características fisicoquímicas al comparar la primera muestra con una base algo seca con la segunda muestra con una base fresca, especialmente en pH y acidez titulable. The technique used was Atomic Absorption Spectrophotometry with Graphite Furnace and Hydride Generator. The average value of Arsenic in the samples was 0.35 ppm, with extreme values of 0.16 and 0.59, with 55% exceeding the maximum permissible limit (MPL) established by MERCOSUR. The average value of Cadmium in the samples was 0.18 ppm, with extreme values of 0.08 and 0.33, with 73% exceeding the MPL established by MERCOSUR and the European Union. The average value of Mercury in the samples was 0.005 ppm, with extreme values of 0.01 and 0.011, with 9% exceeding the MPL established by Brazilian legislation. The average value of Lead in the samples was 0.20 ppm, with extreme values of 0.11 and 0.36, with 45% exceeding the MPL established by MERCOSUR and the European Union. Methodology: quantitative approach, explanatory; seed population (white, red and black) of Chenopodium quinoa, sample was 1 kilo of Chenopodium quinoa for each type, petri dishes were used which was distributed of 3 plates for each biological strain and non-probabilistic sampling by intention. Results: anthocyanins, saponins, flavonoids, among other metabolites, were identified. At the microbiological level, significant inhibition halos of (p<0.05) were evidenced with 9.29 mm (red quinoa), 8.76 mm (white quinoa) and 9.57 mm (black quinoa) against Staphylococcus aureus, on the other hand, no significant halos were evidenced against Escherichia coli and Pseudomona aeruginosa front, only halos of 8.35 mm and 8.46 mm were evidenced for white and black quinoa respectively. The objective of this study was to evaluate the anti-anemic activity of Negra Collana variety quinoa flour (Chenopodium quinoa Willd) and Ramis variety kañihua flour (Chenopodium pallidicaule Aellen) in anemic Holtzman strain rats. The methodology involved obtaining extruded flours of quinoa and kañihua, performing a proximal composition analysis, an acute toxicity test according to the Williams criterion, and a histopathological analysis. Experimental anemia was then induced in rats, and an effective dose was determined. Finally, anti-anemic activity was evaluated for 12 weeks. Results: The flours showed high protein content (22% for quinoa and 16% for kañihua), and both were safe and harmless according to the acute toxicity test. Experimental anemia was successfully induced in rats with hematocrit levels < 33% and hemoglobin < 11 g/dL. The effective dose was 360 mg/kg of quinoa and kañihua flour. In the evaluation of anti-anemic activity, an increase in hematocrit levels of 24.5 ± 0.5% and 22.1 ± 0.3% was observed with quinoa and kañihua flour, respectively, after 12 weeks of treatment (p ≤ 0.05). Conclusion: The oral administration of 360 mg/kg every 24 hours of quinoa and kañihua flour with vitamin C over a 12-week treatment period showed anti-anemic activity in anemic rats.
