These patients require gluten-free diets. However, such diets could have a high glycemic index and low adherence. This review aimed to understand the effect of a gluten-free diet on the growth and metabolism of children with type 1 diabetes and celiac disease. The five phases of Evidence-Based Nutrition (NuBE) methodology were used. After developing the strategy, a search was performed in Pubmed, Science Direct, Wos, Embase, and Scopus databases. 20 articles were selected and evaluated using the CASPE critical reading tool. The article analyzed for the critical review presented a level of evidence I and a strong recommendation grade. This allowed us to conclude that proper adherence to a gluten-free diet enables good metabolic control and proper growth in pediatric patients with type 1 diabetes and celiac disease.
