The objective was to evaluate the acceptability of a nectar made with alfalfa, mango, and camu camu among Adventists in Lima, Peru. Methodology: Applied research, experimental, prospective, and cross-sectional design. A nectar was made using alfalfa, mango, and camu camu, its nutritional value calculated, and sensory characteristics such as odor, taste, and color were evaluated with 100 volunteers from the Seventh-Day Adventist Church in the Independencia district of Lima, Peru. Results: The nectar made from alfalfa, mango, and camu camu contains 23 mg of vitamin A and 504.26 mg of vitamin C, with 53% acceptance for color, 64% for odor, and 71% for taste among Adventists in Lima, Peru. Conclusions: The nectar provides a significant contribution of vitamins A and C, important nutrients for the immune system.
