Since a large number of metals contaminate rivers, lakes, and seas, it is important to determine if these products comply with the maximum permissible limits for mercury and arsenic established by the National Fisheries Health Service (SANIPES) of Peru, and thus evaluate if there is a risk to the consuming population. Methods: To determine mercury, a mercury hollow-cathode lamp was used at a wavelength of 253.70 nm via a graphite furnace. For arsenic determination, an arsenic hollow-cathode lamp was used at a wavelength of 193.70 nm via a hydride generator. Result: No values were found to exceed the maximum permissible limits for mercury and arsenic. Therefore, the objective of the study was to determine the permissibility of arsenic and mercury in horse mackerel (Trachurus murphyi) and bonito (Sarda chiliensis) sold at the Ventanilla fishing terminal, Lima-2024. The methodology was a descriptive, non-experimental, cross-sectional study, where 10 samples of “jurel” and 10 of “bonito” from the Ventanilla fishing terminal were worked with. These samples were analyzed to quantify total arsenic and mercury using the atomic absorption technique. The results indicated that the mercury concentrations in “jurel” and “bonito” were 16,722 +- 2.206 and 15,44 +- 2.229 ug/kg, respectively; and the arsenic concentrations in “jurel” and “bonito” were 57,837 +- 20.005 and 59,808 +- 15,713 ug/kg, respectively. In conclusion, the arsenic and mercury values in “jurel” and “bonito” fish were within the maximum permissible limits established by the Codex Alimentarius.
