Determinación microbiológica de coliformes en alimentos de venta ambulatoria en el mercado de La Victoria – Chiclayo Perú año - 2024

Food hygiene and safety are fundamental aspects for protecting public health, especially in street vendor settings where conditions are often precarious. Street food sales, such as those in traditional markets, pose significant health risks due to poor hygiene practices during food preparation and handling, which can facilitate microbiological contamination and disease transmission. The objective of the research was to determine the incidence of coliforms in street vendors' food at the La Victoria market in Chiclayo. During 2024, the hygienic conditions of 15 food stalls were evaluated, and three groups of food samples (cevichocho, bread with cheese, and vegetable salad) will be randomly collected. The samples were analyzed in the authorized microbiology and parasitology laboratory of the Faculty of Biological Sciences at the Pedro Ruiz Gallo National University.The results showed that the stalls did not meet minimum standards for sanitation and proper handling. Microbiological analysis of the bread with cheese identified bacteria such as Enterobacter, Proteus, Escherichia, Streptococcus, Bacillus, and Staphylococcus; Escherichia, Bacillus, Enterobacter, Proteus, Yersinia, and Streptococcus were detected in the lupin ceviche; while Bacillus, Escherichia, Streptococcus, and Staphylococcus were found in the vegetable salad. It is concluded that the presence of these findings underscores the urgent need to implement sanitary control measures, training in good handling practices, and infrastructure improvements to ensure safe food and protect public health in the La Victoria market.
