Ítem Acceso abierto Content of critical nutrients declared in the nutritional labeling of confectionery products sold by a supermarket in the district of Villa el Salvador, 2022(Universidad Privada Norbert Wiener, 2022-12-30) Rosales Castillo, Yanely Mirella; Bravo Araujo, Gloria TulaObjectives: Determine the content of critical nutrients declared on the nutritional labeling of confectionery products sold in a supermarket in the district of Villa el Salvador, 2022. Methodology: Inductive research with a quantitative, applied approach and with a cross-sectional descriptive design. Critical nutrients were determined using nutritional labels collected in the supermarket, taking as reference the octagons, which indicate the critical levels of sugar, sodium and saturated fat. Results: Regarding the sugar content, 68.5% of the total (35) of the confectionery products analyzed exceed the limit established in the regulations, in addition, 100% have a permitted percentage of sodium and according to the amount of fats the 37.4% of the total (35) are above the Peruvian Technical Standard No. 30021. Conclusion: It is concluded that the percentages of sugar in the confectionery products analyzed do not comply with the Peruvian Technical Standard No. 30021, while for sodium it complies with those indicated in the standard and saturated fats present a high percentage that does not comply with what is established by the regulations.Ítem Acceso abierto Level of knowledge and frequency of omega-3 consumption in teachers of the Professional Academic School of Nutrition and Dietetics of the Norbert Wiener Private University, 2023(Universidad Privada Norbert Wiener, 2023-12-15) Valverde Solorzano, Diana Lucero; Bravo Araujo, Gloria TulaThe rapid international spread of SARS-CoV-2 - responsible for causing the Covid 19 disease - has affected more than 52 million inhabitants and has generated more than 1.29 million deaths in the world. The most vulnerable people to this disease have mainly been people who have had respiratory complications, chronic non-communicable diseases and other comorbidities. Faced with this inflammatory condition, omega 3 fatty acids produce fewer proinflammatory cytokines, therefore, an adequate intake of these omega 3 fatty acids can improve immune function and reduce the severity of people diagnosed with Covid 19. On the other hand Currently, the prevalence of cardiovascular diseases continues to grow alarmingly in each age group, with the adult stage being the one with the highest risk of mortality, which is why diet plays a predominant role in the preventive issue. There is scientific evidence that shows that omega 3 fatty acids are directly related to reducing cardiovascular risk. EPA (eicosapentaenoic) and DHA (docosahexaenoic) have shown great effectiveness in the preventive aspect of various pathologies, which include joint diseases, cardiovascular diseases, neuronal complications and cancer, for this reason they become of utmost importance since they cannot be synthesized by the body, for that reason they must be obtained through the diet.Ítem Acceso abierto Nutritional composition, antioxidant capacity and antibacterial activity of the wild food plant Peperomia Crystallina Ruiz & Pav. (Limonyuyu). Methodology: Applied research, with a mixed approach. Quantitative nutritional composition in original plant methods: MS-INN calculation Collazos 1993; AOAC, 2nd Edition 2019; Differences MS-INN Collazos 1993; Official Methods of Food Analysis: A. Madrid, Vicente 1994; NTP 1980 (Revised 2011); NTP 1999 (Revised 2019); qualitative nutritional composition of the hydroalcoholic extract: the Molis reagent, Fehling A and Fehling B for carbohydrates, proteins with Ninhydrin. The antioxidant capacity of the original plant method of Arnao, Marino and Cano 2001; Swain T, Y Hillis 1959; hydroalcoholic extract method 2,2-Diphenyl-1-Picrylhydrazyl (DPPH). Antibacterial activity of the hydroalcoholic extract on Escherichia coli ATCC 25922 was compared with the Mc turbometric scale. Farland, and was estimated by visual inspection. Results: Limonyuyu has proteins, carbohydrates, calories, vitamin C, iron, magnesium, potassium, sodium, crude fiber, moisture and ash. The hydroalcoholic extracts have a high antioxidant capacity at a concentration of 100µg that inhibited 24.577% of the DPPH radical with p=0.00001488 and high antibacterial activity on Escherichia coli ATCC 25922 with inhibition zones > 14.99 mm for the hydroalcoholic extracts at 25%, 50%. , 75% with a p=0.01563; p=0.000000003716; p=0.00000000001465. Conclusion: Peperomia crystallina Ruiz & Pav. (Limonyuyu) demonstrated to have a varied nutritional composition, antioxidant capacity against DPPH and antibacterial activity against Escherichia coli ATCC 25922.Ítem Acceso abierto Relationship between level of knowledge and practices of healthy lifestyles in students of the professional academic school of human nutrition of the Norbert Wiener Private University, Lima-Peru, 2022(Universidad Privada Norbert Wiener, 2022-12-30) Illaconza Chacón, Andrea Elizabeth; Bravo Araujo, Gloria TulaObjective: Determine the relationship between level of knowledge and practice of healthy lifestyles in students of the Professional Academic School of Human Nutrition of the Norbert Wiener Private University, Lima-Peru, 2022. Methodology: Analytical, hypothetical-deductive study with focus quantitative, non-experimental, descriptive-correlational, analytical, transversal and prospective. For data collection, a survey was used for each variable, both with closed questions. Results: Weak indirect correlation between level of knowledge and lifestyle practices (r= -0.035; p=0.781). Conclusion: There is a weak, indirectly proportional negative relationship between the levels of knowledge and healthy lifestyle practices in nutrition students at the Norbert Wiener Private University Lima-Peru, 2022.Ítem Acceso abierto Relationship between the level of knowledge about complementary feeding and nutritional status in children from 6 to 12 months in the Collique III health center, Comas 2023(Universidad Privada Norbert Wiener, 2024-09-25) Sulca Ccancce, Vanessa; Bravo Araujo, Gloria TulaGeneral objective: Determine the relationship between the level of knowledge about complementary feeding and nutritional status in children from 6 to 12 months at the Collique III Health Center, Comas 2022. Methodology: Quantitative method, non-experimental, transversal and correlational design. The sample was made up of 120 mothers with their respective children aged 6 to 12 months treated at the Collique III Health Center, located in Comas. A validated and reliable questionnaire was used as an instrument to evaluate the level of knowledge about complementary feeding, while the WHO growth charts were used to evaluate nutritional status. Results: the average age was 26.56 years. 75% (n=117) completed secondary school. Regarding the age of the children, 28.8% (n=45) were 8 months old. Knowledge about complementary feeding, 80.1% (n=125) was regular. Regarding the start dimension, 71.2% (n=111) were regular, in the characteristics dimension, 60.3% (n=94) were regular and in the type of food dimension, 55.1% (n=86) was deficient, while, in the food hygiene dimension, 79.5% (n=124) was regular. 57.1% (n=89) were of normal weight, 24.4% (n=38) were overweight, 10.3% (n=16) were underweight and 8.3% (n=13) ) were obese. Conclusion: There is a significant relationship between the level of knowledge about complementary feeding and nutritional status in children from 6 to 12 months in the Collique III Health Center, Comas 2023.
