Publicación Acceso abierto Determinación de arsénico, cadmio y plomo en barras de chocolate adquiridas en el centro comercial Polvos Azules de Lima Metropolitana en el periodo enero-febrero 2016(Universidad Privada Norbert Wiener, 2017) Velazque Leiva, Miguel Angel; Hernández Aguilar, Manuel GregorioThe purpose of this thesis is to determine the concentrations of Arsenic, Cadmium and Lead in chocolate bars purchased at the Polvos Azules Shopping Center in Metropolitan Lima. A collection of chocolate brands sold at the Polvos Azules Shopping Center in Metropolitan Lima was carried out, having a total of 10 samples, the analyzes were performed using the atomic absorption spectrophotometry method by hydride generator for Arsenic and by graphite furnace for Cadmium and Lead. Arsenic concentrations ranged from 0.21 mg / kg to 0.47 mg / kg with an average of 0.30 mg / kg, Cadmium concentrations ranged from 0.21 mg / kg to 0.57 mg / kg with an average of 0.34 mg / kg and Lead concentrations ranged from 0.15 mg / kg to 0.28 mg / kg with an average of 0.20 mg / kg. It is concluded that 100% of the chocolate bar samples purchased at the Polvos Azules shopping center in Metropolitan Lima during the period January-February 2016 contained concentrations of arsenic, cadmium, and lead; and did not exceed the maximum permissible concentration established by the Codex Alimentarius for each of these.Publicación Acceso abierto Determinación de la concentración de cadmio y plomo en huevos (clara y yema) de codorniz “Coturnix coturnix” expendidos en mercados más concurridos del distrito de San Martin de Porres en Lima. Currently, Peru lacks regulations regarding permissible limits of these toxic substances in food. The present study aimed to determine the concentration of cadmium and lead in the egg white and yolk of quail eggs (Coturnix coturnix) sold in the busiest markets of the San Martin de Porres district. A total of twenty quail eggs were sampled, and both the egg white and yolk were analyzed together using Graphite Furnace Atomic Absorption Spectroscopy. The results were then compared with the Mexican Official Standard NOM-159-SSA1-1996 for cadmium (0.05 mg/kg) and the MERCOSUR Technical Regulation for lead (0.1 mg/kg). The results for cadmium ranged from 0.04 mg/kg to 0.14 mg/kg, with a mean of 0.083 mg/kg, where 7 samples (35%) were below the maximum permissible limits, and 13 samples (65%) exceeded the maximum allowable values. Regarding lead, the values ranged from 0.08 mg/kg to 0.26 mg/kg, with a mean of 0.150 mg/kg, where 2 samples (10%) were below the maximum permissible limits, and 18 samples (90%) exceeded the maximum allowable values. In conclusion, the levels of cadmium and lead in quail eggs exceed the maximum permissible limits established by the aforementioned standards.Publicación Acceso abierto Determinación de la graduación de etanol en vinos tintos nacionales que se expenden el mercado Unicachi del distrito de Comas – Lima, periodo diciembre 2016–marzo 2017(Universidad Privada Norbert Wiener, 2017) Cardenas Rivera, Nataly Maria; Melendez Ruiz de la Vega, Leslie Roxana; Hernández Aguilar, Manuel GregorioAlcoholic beverages are produced by fermentation and/or distillation processes, reaching different alcoholic strengths ranging from an average of 5% to 50%. Among these is wine, with various types such as red, burgundy, and white, mainly obtained from grapes, which are highly consumed, especially during festivities, meetings, and celebrations. Wines have an alcoholic strength that fluctuates between 10% and 20% v/v, but this can be adulterated or counterfeited by merchants to obtain greater profits. The objective of this research was to determine the alcoholic strength present in the collected national red wines and verify if these strengths correspond to the labels, as well as if they are within the range specified by the Peruvian Technical Standard (NTP) N° 212.014:2011. For the study, 30 samples of red wine were analyzed. These were acquired from various stalls at the Unicachi market in the Comas district and subsequently analyzed using a Gas Chromatograph with Flame Ionization Detector (GC-FID). Results reported alcoholic strengths with a minimum value of 1.03% v/v and a maximum value of 8.86% v/v from a total of 30 national red wines of different brands. These findings confirm our hypothesis, which states that the national red wines sold in the Unicachi market do not contain the alcoholic strength consigned on their label, as they present a lower alcohol degree. These results do not comply with the Peruvian Technical Standard (NTP) N° 212.014:2011, which indicates that wine must have a minimum alcoholic strength of 10% v/v.Publicación Acceso abierto Determinación de plomo y cadmio en barras labiales comercializadas en el Mercado Huáscar del distrito de San Juan de Lurigancho de Lima en el periodo junio–agosto de 2016(Universidad Privada Norbert Wiener, 2017-10-03) Castillo Caysahuana, Susan Eiko; Hernández Aguilar, Manuel GregorioThe present study was conducted with the objective of determining the concentration of lead and cadmium in lipsticks sold at the Huáscar Market in the district of San Juan de Lurigancho, Lima, during the period June–August 2016. The research followed a descriptive, observational, cross-sectional, and prospective design. A total of 10 lipsticks were collected from 5 stands within the market. The concentrations of lead and cadmium were analyzed using atomic absorption spectrophotometry with graphite furnace. For reference, the permissible limit was established at 10.00 ppm for lead (Mexican and ASEAN regulations) and 5.00 ppm for cadmium (FDA standard). The results showed that the lipsticks contained maximum levels of 27.18 ppm of lead and 3.31 ppm of cadmium. While cadmium concentrations were within acceptable limits, lead concentrations exceeded international safety standards, indicating a potential health risk for consumers regularly using these products.Publicación Acceso abierto Determinación de plomo y cadmio en jugos de naranja (citrus sinensis) expendidos de forma ambulatoria en el paradero Villa Sol - Los Olivos: periodo octubre 2016-enero 2017(Universidad Privada Norbert Wiener, 2017) Dávila Olano, Carlos Eduardo; Hernández Aguilar, Manuel GregorioHeavy metals contributed to the environment by industry and artisanal manufacturing machinery can affect the development of orange crops (Citrus sinensis) and contaminate orange juice. In order to know the current levels of heavy metals lead (Pb) and cadmium (Cd), 15 samples of orange juice sold on an outpatient basis at the Villasol - Los Olivos bus stop were quantified - Period October 2016 - January 2017. The metal contents in orange juice were determined for lead and cadmium using the graphite furnace atomic absorption method in the Cetox laboratory. The average total metal contents in orange juice were: Cd: 0.144 mg / kg and Pb: 0.305 mg / kg, which were compared with the permissible limits of Mercosur and the European Union. These results indicate that the orange juices analyzed exceed the permissible limits for lead and cadmium according to the permissible limits of Mercosur and the European Union.
