Ítem Acceso abierto Antioxidant capacity and sensory analysis of an ice cream made with prickly pear (opuntia ficus-indica l.) and tumbo (passiflora tripartita kunth)(Universidad Privada Norbert Wiener, 2022-10-17) Salazar Mendoza, Gabriela; Inocente Camones, Miguel AngelObjective: Evaluate the antioxidant capacity and overall acceptability of an ice cream made from a mixture of prickly pear (Opuntia ficus-indica L.) and passion fruit (Passiflora tripartita Kunth). Methodology: For the formulation and preparation of the ice cream, unit operations were performed according to the investigators' procedures under the parameters of Peruvian Technical Standards. Sensory analysis was carried out among ice cream consumers, evaluating appearance, taste, color, smell, and general acceptability using a Likert scale. The antioxidant capacity was evaluated using a spectrophotometric method with the DPPH radical. Phenolic compounds were analyzed according to the method described by Sánchez et al. (2013), Hernández et al. (2019), and Kim et al. (2019), using the Folin-Ciocalteu reagent and UV-visible spectrophotometry. Results: For taste, Sample No.1 (59%) had the highest acceptance, Sample T2 (37%) had the lowest, and Sample T3 (42%) showed a significant number of "liked it quite a lot". The study is analytical, cross-sectional and prospective. Cakes were made with different percentages of aguaymanto puree as a substitute for wheat flour: Formulation 10%, 30% and 50% to subsequently determine the antioxidant capacity, the content of phenolic compounds, nutritional value and sensory characteristics through a hedonic type test. of 9 points in 50 panelists. Results: The sensory evaluation showed that the three formulations of the cake with aguaymanto puree were sensory accepted. In addition, the results obtained from the antioxidant activity using the DPPH method showed that the cake made with 50% aguaymanto puree presents 869.022 µM trolox equivalent and in the quantification of the content of phenolic compounds where the result is 203.368475 mg Equivalent Gallic Acid/ g cake. This secondary research titled “Effect of Omega-3 Supplementation in Hypertriglyceridemic Patients: A Critical Review” aimed to provide a professional critical commentary based on a review of clinical studies related to omega-3 supplementation in hypertriglyceridemic patients. The clinical question was: “What is the effect of omega-3 supplementation (fish oil, olive oil) in adult hypertriglyceridemic patients of both sexes?” The Evidence-Based Nutrition (NuBE) methodology was used, and information was sought from PUBMED, SCIENCE DIRECT, SCIELO, ELSEVIER, and SCOPUS, yielding 21 articles, from which 10 were selected and evaluated using the CASPE critical reading tool. A descriptive cross-sectional, retrospective study was carried out and once the analysis of the results of the clinical records was carried out, the following conclusions were reached: Gallbladder Lithiasis remained with a higher prevalence in the female sex with a total of 320 patients, represented in 83% of the sample, compared to 17% of the male sex (65 people). It was determined that 67% of the sample were adults (259 people), followed by a young adult population represented in a 20%, that is, 75 patients. The research method is hypothetical-deductive analytical because it involves the development and acceptability of a product mainly made from guinea pig blood. The approach of this research project is quantitative as it focuses on objective measurements and statistical analysis, and the data will be collected through surveys. The type of research is applied experimental because it aims to solve a specific problem. The design of the project is prospective and transversal as it will begin to be conducted, and data will be collected over a set period. A hedonic sensory test was applied to adults residing in the district of Villa El Salvador in the province of Lima, Peru. The study sample consisted of 100 adults. Guinea pig blood gummies were made, and a hedonic sensory test was applied, which included preference and acceptability tests, with result sheets as instruments. The acceptability test was used to define the taste, color, sweetness, and texture of the three formulations made. He used the hypothetical deductive method, an applied type of research, with a non-experimental design and a quantitative approach. The population and sample consisted of 80 healthcare professionals from the cardiology and coronary care service of the aforementioned hospital. Regarding the technique and instrument to collect information, a data collection sheet was used to evaluate nutritional status and a survey to establish lifestyle. The main results showed a healthy level of nutritional status in 45% of the care staff of the Cardiology and Coronary Care service of the Alberto Sabogal Sologuren National Hospital, Callao, with a moderate level of physical activity in 60% of the care staff. Materials and methods: The study is cross-sectional, prospective and analytical. Three formulations of different concentrations were prepared: formulation 1 (40% coffee pulp), formulation 2 (60% coffee pulp) and formulation 3 (80% coffee pulp). A hedonic sensory test was applied to determine the characteristics of smell, color, flavor, appearance and acceptability in 100 adults of both sexes from the district of Villa el Salvador. Results: The formulation containing 40% coffee pulp has the highest acceptability in all attributes, while the caffeine content was determined through the AOAC method and was 41.2 mg in 100mL of sample. It contains polyphenols, flavonoids, and other components with antioxidant properties that can be exploited. The aim of this study was to evaluate the antioxidant activity of two products fermented from grape pomace of the black Burgundy variety, obtained from a Peruvian winery. Ten kilograms of grapes were collected, washed, and crushed. The preparation of the inoculum was done with Saccharomyces cerevisiae yeast, and Fermocel, a yeast nutrient, was added to the wine. The containers were sealed to allow the must to begin fermentation. Two analyses were performed on the extracts: phenolic compound quantification in the wine and vinegar by the Folin-Ciocalteu method and UV-visible spectrophotometry, as described by Sánchez et al. (2013), Hernández et al. (2019), and Kim et al. (2019), and the antioxidant capacity using DPPH (1,1-diphenyl-2-picrylhydrazyl) based on the methodology of Brand-Williams, known as DPPH. The results showed a positive effect of higher concentrations of phenolic compounds and antioxidant capacity in both the wine and vinegar. Methodology: Quantitative, experimental, analytical method, applied. The study population was diners at Tilda's soup kitchen, being one hundred and forty-six adults; being located in the district of Ate Vitarte. Results: The quantification of the total iron content of the drink presented a density of 1.265 g/ml and the iron units were 1.3899 ± 0.0139ppm and 0.3284 ± 0.0003 mg/100gr, in addition the majority of the people were not at all satisfied with the color of the drink in 93.2%, nor with the smell in 45.9%, they were not very satisfied with the consistency in 69.2%, however, they are very satisfied with the appearance in 74%, and According to taste acceptability, 37.7% are very satisfied. Conclusion: The drink has acceptable physicochemical characteristics according to current standards, however, It has little acceptability by the population regarding its color, smell and consistency.
