Preparation of bread enriched with cocoa and determination of its antioxidant capacity

Abstract

The purpose of this research was to establish the antioxidant capacity in a cocoa-based enriched bread. Two types of formulations of said bread were made. In addition, the organoleptic properties were quantified: taste, structure, aroma, coloration and eligibility. For this, 100 untrained panelists participated, who belonged to the Professional Academic School of Human Nutrition of the Norbert Wiener Private University, and an unstructured hedonic range with a score from 1 to 5 was used. On the other hand, It was determined that they are equal with respect to the intensity of: color, texture, acceptability, but with differences in the average between the two types with respect to flavor intensity. On the other hand, there is a difference in the dispersion of the responses with respect to the median or shortened mean of the odor intensity.

La intervención nutricional es de importancia para medir la fuerza de presión manual por dinamometría y determinar si esta técnica puede identificar el riesgo de mortalidad en pacientes en hemodiálisis, el presente trabajo tuvo como objetivo identificar la sensibilidad de esta prueba para determinar el riesgo de mortalidad. La pregunta clínica fue: ¿Es la dinamometría un predictor del riesgo de mortalidad en pacientes en TRR por Hemodiálisis? Se utilizó la metodología Nutrición Basada en Evidencia (NuBE). La búsqueda de información se realizó en PUBMED, MEDLINE, SCIELO, SCOPUS, SCIENCE DIRECT, encontrando 24 artículos, que han sido evaluados por la herramienta para lectura crítica CASPE, seleccionando al final el trabajo de investigación titulado “ La fuerza de presión manual como predictor de la mortalidad por todas las causas en pacientes con enfermedad renal crónica sometidos a diálisis: un meta-análisis de estudios de cohorte prospectivos”, el cual posee un nivel de evidencia I y Grado de Recomendación fuerte . Se concluyó que la medición de HGS nos brinda un dato útil sobre la fuerza muscular en los pacientes y que podría ser una herramienta simple y confiable para predecir la mortalidad en pacientes con ERC sometidos a diálisis.
