Resumen
In this research work, the analytical method of quantitative approach, basic type, and experimental design was applied. To determine the formulation, the model and process of Capatinta and Cardenas (1) were used. To determine the nutritional and microbiological composition, the formulated product was subjected to laboratory tests, where a sample of 1kg of hamburger was analyzed, which was divided into: 1/2kg for the evaluation of the nutritional composition and 1/2kg for the evaluation of the microbiological composition. A total of 100 25 g hamburger portions were prepared. each one, the same ones that were the sample to carry out the hedonic test on 100 students from the Norbert Wiener University; The data obtained were processed in the SPSS software using descriptive statistics, where four aspects were evaluated: color, smell, flavor and texture with the hedonic test technique of Lawless and Heymann (3). concluding that the final product fulfills two purposes, the first is to be a healthy food option for human consumption; and, the second is to contribute to caring for the planet by reusing food waste.
Resumen
En el presente trabajo de investigación se aplicó el método analítico de enfoque cuantitativo, tipo básica, y diseño experimental. Para determinar la formulación, se utilizó el modelo y proceso de Capatinta y Cardenas (1) Para determinar la composición nutricional y microbiológica, el producto formulado fue sometido a pruebas de laboratorio, donde se analizó una muestra de 1kg de hamburguesa, el mismo que fue dividido en: 1/2kg para la evaluación de la composición nutricional y 1/2kg para la evaluación de la composición microbiológica. Se prepararon en total 100 porciones de hamburguesa de 25 g. cada una, las mismas que fueron la muestra para realizar el test hedónico en 100 estudiantes de la Universidad Norbert Wiener; los datos obtenidos fueron procesados en el software SPSS utilizando una estadística descriptiva, donde se evaluó cuatro aspectos: color, olor, sabor y textura con la técnica de la prueba hedónica de Lawless y Heymann (3). concluyendo que el producto final cumple dos finalidades, la primera es ser una opción de alimento saludable para el consumo humano; y, la segunda contribuir con el cuidado del planeta por reutilizar mermas alimenticias.
