    Acceptability of a nectar made with alfalfa, mango and camu-camu in Adventist people in Lima-Peru.

    The variety of beverages rich in vitamins A and C remains limited in our country, despite the agricultural diversity of foods rich in these nutrients, which are essential for the proper functioning of the immune system. The objective was to evaluate the acceptability of a nectar made with alfalfa, mango, and camu camu among Adventists in Lima, Peru. Methodology: Applied research, experimental, prospective, and cross-sectional design. A nectar was made using alfalfa, mango, and camu camu, its nutritional value calculated, and sensory characteristics such as odor, taste, and color were evaluated with 100 volunteers from the Seventh-Day Adventist Church in the Independencia district of Lima, Peru. Results: The nectar made from alfalfa, mango, and camu camu contains 23 mg of vitamin A and 504.26 mg of vitamin C, with 53% acceptance for color, 64% for odor, and 71% for taste among Adventists in Lima, Peru. Conclusions: The nectar provides a significant contribution of vitamins A and C, important nutrients for the immune system.

    Actividades del proceso de atención nutricional registradas en la historia clínica en pacientes quirúrgicos atendidos en el Hospital María Auxiliadora durante el año 2023

    El proceso de atención nutricional (PAN) es un conjunto de pasos que garantiza la calidad del servicio realizado por el profesional nutricionista en los diferentes sistemas de salud. El objetivo de nuestra investigación fue Describir las actividades del Proceso de atención nutricional registradas en la Historia Clínica en pacientes quirúrgicos atendidos en el Hospital María Auxiliadora durante el año 2023, a partir de la revisión de 400 historias clínicas en pacientes quirúrgicos atendidos entre agosto y noviembre de 2023, recolectamos información del registro de las actividades que comprende el PAN, encontramos que, el 47.5% tienen entre 30 a 59 años de edad, presentan 1.13+0.63 días de ayuno. El 51.5% presenta estancia hospitalaria prolongada. En cuanto a los indicadores nutricionales, el 100% no registra IMC, el 99% y el 87.75% registra peso y talla respectivamente. El tamizaje nutricional se registró entre 90 a 100%, el 94% registra la dieta, el 96% no registra las calorías, el 90% registra macronutrientes, solo el 2% registra monitoreo nutricional. Conclusiones: Es necesario el registro de las actividades del proceso de atención nutricional considerando que nos permite modificar la estrategia garantizando el éxito de la terapéutica del paciente quirúrgico.

    Adequacy and acceptance of the hypoglucid breakfast in the hospitalized patient of the surgery service, june 2023

    Nutrition is essential in controlling blood glucose in people with diabetes. Objective: To determine the nutritional content and acceptance of a hypoglycemic breakfast in hospitalized patients in the surgery service during June 2023. Methodology: This is a descriptive study with a mixed approach. Non-experimental, prospective, and cross-sectional design. 30 hypoglycemic breakfasts served at Hospital María Auxiliadora during June 2023 were analyzed, finding the following nutritional content: 327.75+77.86 kcal, 14.21+4.24 g of protein, 44.23+10.62 g of carbohydrates, 12.25+3.66 g of fats, and 5.83+2.90 g of fiber. Normal adequacy was found in 50% for energy (kcal), 16.7% for fats, 33.3% for carbohydrates, and 8.3% for fiber. Regarding vitamins, 25% showed normal adequacy for Vitamin A, 8.33% for Niacin, and 66.67% for Calcium. Conclusion: It is necessary to include a nutrition professional as part of the team for the comprehensive treatment of people with diabetes.

    Analysis of the content of critical nutrients in snack products sold in Lima-Peru, 2021

    Octagonal labeling has proven to be an effective strategy in reducing overweight and obesity rates, due to the warnings that come on packages with the image of one or more octagons depending on the snack product that contains critical nutrients such as sugar, sodium, saturated fat and trans fat. If a person is overweight or obese, the possibility of developing diabetes, high blood pressure, cardiovascular diseases, among others, increases in the future. That is why this research was born as a contribution of knowledge for people who not only recognize and know octagons, but also They also raise awareness about the content of critical nutrients in relation to the comparison parameters according to the information declared on each product.

    Anthropometric indicators and their relationship with eating habits in an educational institution in Metropolitan Lima, 2023

    The objective of this research is to determine the relationship between the indicators Anthropometric measurements and eating habits in adolescents in an educational institution of Metropolitan Lima 2023. Methodology: This research will be carried out under the hypothetical method deductive, The approach is quantitative, the type is applied, non-experimental design with cross-sectional and correlational section, the sample was made up of 200 adolescents from an educational institution in Metropolitan Lima. Results: A significant correlation is evident since P=0<0.002 and this is less than 0.05, similarly, the level of correlation is 0.221 between the indicators anthropometric and eating habits. On the other hand, the body mass index of the students of an educational institution in Metropolitan Lima, 9.5% (19) have a classification of obesity, 90.00% (180) have a classification of overweight and only 0.5% (1) have a normal classification. Likewise, the levels of the eating habits of the students of an educational institution in Lima Metropolitan, 66.5% (133) have healthy eating habits and 33.5% (67) have unhealthy eating habits. Conclusion: it is stated that there is a significant and direct relationship between the indicators Anthropometric measurements and eating habits in adolescents from an institution educational in Metropolitan Lima, 2023.

    Body composition in patients hospitalized at the national hospital dos de mayo, December 2022

    There are different methods to determine nutritional diagnosis, including body composition analysis such as anthropometric indicators and bioimpedance. Objective: To describe the body composition of patients hospitalized at the National Hospital Dos de Mayo, December 2022. Methodology: Descriptive study of a basic type, with a quantitative approach, non-experimental design, prospective, and cross-sectional. In 78 patients hospitalized in the Medicine Service, protein and fat reserves were calculated from anthropometry and Bioelectrical Impedance Analysis (BIA). The protein reserve, using anthropometry, showed that 35.90% of the patients had muscle depletion using Arm Circumference (AC), and the percentage increased to 41.03% when using the Arm Muscle Circumference (AMC). Using BIA, Lean Mass (LM) was classified as “Low” in 14.10%, and Muscle Mass (MMus) increased to 37.18%. For Fat Reserve, anthropometry showed that 58.97% of patients had excess Triceps Skinfold (TSF), and 48.72% had abdominal circumference (AC) indicating a risk of developing metabolic and cardiovascular diseases. Using BIA, 44.87% of the population was classified as “High.” Conclusion: The use of BIA is recommended within diagnostic equipment to allow a better analysis of body composition, which would contribute to improving the design of nutritional intervention plans.

    Body fat using bioimpedance in hospitalized patients of Hospital Dos de Mayo, December 2022

    The Body Mass Index (BMI) is not a sufficient indicator for diagnosing body fat. This study aimed to calculate the body fat percentage using bioimpedance in patients at the Dos de Mayo Hospital in December 2022. The study used a non-experimental, prospective-cross-sectional design and a sample of 137 hospitalized patients. The data collection technique relied on clinical history and information provided by the nutritionist as part of the nutritional care process, including bioimpedance to determine body fat percentage. The results showed that only 48.2% of patients had a normal body fat percentage, 44.5% were diagnosed with elevated body fat, and 7.3% had low body fat. The elevated diagnosis was most prevalent in males (54.1%), with 21.3% having a personal history of diabetes mellitus and cardiovascular diseases. In conclusion, new procedures are needed in clinical nutritional assessment that includes other indicators beyond BMI.

    Calorimetry and food consumption in people with psoriasis and psoriasis arthritis from an association in Lima-Peru, 2023

    The design of a nutritional plan for a person with psoriasis and psoriatic arthritis requires knowledge of nutritional requirements as well as food consumption to identify eating habits. Objective: To determine the caloric requirement using calorimetry and food consumption in people with psoriasis and psoriatic arthritis from an association in Lima, Peru, in May 2023. Methodology: This is a descriptive study with a quantitative approach, non-experimental, prospective, and cross-sectional. Results: 17 people with psoriasis and psoriatic arthritis were included, 76.5% of whom were women, and 47.1% were between 20 to 40 years old. 64.7% of the population had more than 10 years of illness. Their weight was 72.16+15.70 kg, height 1.61+0.06 m, and age 44.05+13.05 years. Calorimetry indicated 1,582.64+513.20 kcal required. 47.06% were overweight. 58.82% consumed vegetables 2 times a week. Biscuits were the most consumed snacks (41.2%), and 52.9% consumed snacks once a week. 41.2% consumed less than half a teaspoon of salt daily. Conclusion: To implement the nutritional care process, it is necessary to know the frequency of food consumption to establish a nutritional diagnosis and caloric requirements for designing the nutritional plan.The design of a nutritional plan for a person with psoriasis and psoriatic arthritis requires knowledge of nutritional requirements as well as food consumption to identify eating habits.     Compliance with Established Limits and Information Declaration of Food Additives in the Nutritional Labeling of Energy Drinks Sold in Supermarkets of Metropolitan Lima, 2022

    Nutritional labeling is a tool by which the consumer responsibly and informedly selects a product intended for consumption; in it we observe the presence of information about the content of critical nutrients and food additives. Objective: Describe compliance with established limits and declaration of information on food additives in the nutritional labeling of energy drinks sold in supermarkets in Metropolitan Lima, 2022. Methodology: The study design has a quantitative approach, basic explanatory and transversal type. The study population is made up of 18 energy drinks. For data collection, 2 record sheets were used, for the content of food additives and for their declaration information on the labeling of energy drinks. Results: Regarding compliance with the established limit for caffeine, it was reported that 44.4% (n=8) contain limits of 25 to 35 mg per 100 ml, complying with the regulations. In the case of taurine, 44.4% (n=8) complied with maintaining the maximum limit of 400 mg per 100 ml. Regarding the evaluation of the presence of declared information on food additives on nutritional labeling, it was found that caffeine is declared in 94.4% (n=17); Taurine has been declared in 77.8% (n=14) of the energy drinks studied. Conclusions: Most energy drinks comply with the declaration of food additives, caffeine and taurine, in their nutritional labeling and do not exceed the maximum limits established according to the Peruvian technical standard.

    Consumo de grupos de alimentos en trabajadores de una empresa de transportes en Pachacutec, Ventanilla, 2025

    Introducción: los trabajadores conductores de transportes disminuyen su actividad física propio de la profesión a la que se dedican, los horarios alterados y la poca disponibilidad de alimentos y entornos poco saludables podría afectar la calidad de vida afectando su salud y nutrición. Objetivo: Determinar el consumo de grupos de alimentos en los trabajadores de una empresa de transporte en Pachacútec Ventanilla,2025. Materiales y métodos: Se realizó de un estudio descriptivo, no experimental, transversal y prospectivo. La muestra estuvo conformada por 40 conductores, a quienes se les aplicó una encuesta estructurada sobre el consumo diario de alimentos, considerando los grupos de lácteos, cereales, frutas y verduras. Resultados: el 60% de los encuestados consumió un vaso diario de leche o yogurt, mientras que el 27.5% no los consumía. El consumo de cereales, el 95% reportó consumo moderado destacando el pan o tostadas (87.5%) seguido del arroz y pasta (87.5%). Las frutas fueron consumidas mayormente en una porción diaria, especialmente mandarina, manzana, naranja y plátano; sin embargo, hubo frutas como la papaya o la sandía que presentaron niveles importantes de no consumo. Para verduras, el 77.5% reportó una porción diaria de frescas y el 70% de cocidas, el jugo de verduras fue poco consumido, con un 60% que no lo incluyó en su dieta. Conclusiones: El consumo de cereales fue moderado, mientras que la ingesta de frutas, verduras y lácteos fue baja, lo cual podría representar un riesgo nutricional a largo plazo en esta población laboral.

    Critical nutrients declared in the milk and dairy product labeling from the evaporated category of main brands in Peru, 2021

    Introduction: Nutritional labeling provides information on the content and amount of nutrients in a product, and this information must be accurate and objective to make purchasing decisions, as it includes crucial nutrients like "critical nutrients," whose inadequate intake could lead to non-communicable diseases. Objectives: Determine the amount of critical nutrients declared and compliance with labeling regulations for evaporated milk and dairy products from leading brands in Peru, 2021. Design: Quantitative, non-experimental, prospective-cross-sectional study. Population: Evaporated milk and dairy products from leading brands in Peru. Results: 100% of the evaluated products failed to meet the technical standards of Law 30021 in at least one of the three critical nutrients. 71.4% of products complied with the established labeling requirements, while 28.6% did not. Conclusions: All products declared at least 2 of the critical nutrients above the technical standards set by Law 30021, and 100% of the products complied with at least one of the two labeling parameters.

    Differences in nutritional content in processed or ultra-processed cereals for children sold in supermarkets in Lima-Peru, 2021

    The consumption of processed and ultra-processed products is associated with increased overweight and obesity, especially in children, due to their content of critical nutrients such as sugar, sodium, saturated fat, and trans fats. The aim of the study was to compare the nutritional content of processed or ultra-processed cereals targeted at children sold in supermarkets in Lima, Peru, during the last quarter of 2021. This is an analytical, prospective, and cross-sectional study. Using data collection from Chepulis et al., 58 processed and ultra-processed cereals were analyzed, finding that the cereals analyzed had high sugar content. The most commonly used colorant was E 129 – Red Arilla 9, present in 15.52% of the samples. The cereals covered vitamin B requirements (B1, B2, B3, B5, B6, B9, and B12) and vitamin C in preschoolers, and some vitamin B in school-age children. In minerals, they covered magnesium and potassium in both preschoolers and schoolchildren, and iron in preschoolers.

    Differences in the content of critical nutrients in fruit juices and nectars sold in supermarkets of Villa María del Triunfo, may 2023

    Nutritional labeling is used as a tool to identify and inform about the nutrients in processed and ultra-processed products consumed daily in our country. Objective: To determine compliance with the content of critical nutrients in fruit juices and nectars sold in supermarkets in the VMT district in May 2023. Methodology: Quantitative study with a non-experimental, prospective, and cross-sectional approach. Population: Fruit juices and nectars sold in Lima, Peru, in May 2023. Results: The study included a total of 74 products, subdivided into juice, drinks, and nectar categories. It was found that 17.6% (n=13) of the products were juices, 71.6% (n=53) were drinks, and 10.8% (n=8) were nectars. Regarding compliance with technical parameters, there was a difference in the critical nutrient sugar, with 70.3% (n=52) of the sample meeting the Ministry of Health (MINSA) parameters and 16.2% meeting the Pan American Health Organization (PAHO) standards. Conclusion: It is essential to develop different habits when shopping, including checking the nutritional labeling of products to understand their nutritional content.

    Los Comedores autogestionarios son una fuente importante para cubrir los requerimientos nutricionales de sus beneficiarios ante la escasez de alimentos y la inseguridad alimentaria, por ello la necesidad del uso de material educativo adecuado para sus capacitaciones Objetivo: Validar el material educativo “Menú Saludable aplicado en el Comedor Autogestionario Roberto Gamboa en Lima-Perú, durante el año 2024. Metodología: Se trata de una investigación descriptivo y observacional con un enfoque cualitativo, cuasi experimental, transversal y prospectivo. En una población de 30 beneficiarias del Comedor Autogestionario Roberto Gamboa en Lima-Perú se realizaron sesiones educativas para validar el material educativo diseñado aplicando un Test al inicio y final de la misma. Resultados: el grupo etario más prevalente lo constituyen las beneficiarias mayores de 60 años (36.66%), el 86.66% tienen como nivel de instrucción la educación primaria. Se realizó una prueba piloto en donde el 100% validó adecuado los ítems Atracción, Comprensión y Afinidad. Para analizar la utilidad del material educativo se aplicó Test antes y después de la sesión educativa, mostrando diferencias entre el porcentaje de aprobados en el Pre y Post Test a las preguntas sobre Menú Saludable, a saber, pregunta 1:16.67% y 96.67%, pregunta 2: 66.67% y 100.00%, pregunta 3: 26.67% y 93.33%, pregunta 4: 60.00 y 96.67% y pregunta 5: 66.67% y 100.00% Conclusión: Es necesaria la implementación de un plan de educación alimentaria en los comedores autogestionarios para mejorar el aporte nutricional de los beneficiarios

    Eating habits in students of a public university in Lima Peru, 2022

    Study with a quantitative, non-experimental, prospective and transversal approach, in a sample of 118 students from the Faculty of Engineering of a public university in Lima, Peru, surveyed in electronic format, with prior informed consent, in the month of April 2022. found that the prevalent age group is 21 to 25 years of age. Regarding the frequency of consumption of recommended foods, we found that 22.88% (n=27) consume vegetables 3 to 4 times per week; 22.88% (n=27) consume fruits 2 times a week; 20.34% (n=24) consume dairy products 1 to 2 times a week and 23.73% (n=28) consume 4 glasses of water a day. Regarding the frequency of consumption of non-recommended foods, we have that 25.42% (n=28) consume sausages once a week, 37.29% (n=44) consume fast food and candy at least once a week. , as well as 32.20% (n=38) consume pastry products once a week, 30.51% (n=36) consume snacks 1 Once a week, 25.42% (n=30) consume 2 glasses of sugary drinks. Regarding the frequency of consumption of the main meals, we found that only 57.63% (n=68) eat breakfast, 67.80% (n=80) have lunch, and 5593% (n=66) have dinner.

    Eating habits, physical activity, and sleep quality in higher education students during the COVID-19 health emergency in metropolitan Lima, 2021

    Educación alimentaria como estrategia para la reducción de la anemia en ocho regiones del Perú - 2020

    En el Perú, aunque se observa una disminución de la anemia del 3,4% en el año 2019, con relación al 2018, la prevalencia continúa desde hace más de una década, con cifras que la califican como un problema severo de salud pública, pues afecta a un promedio de 620 000 niños a nivel nacional. La prevalencia de anemia en niños y niñas menores de 36 meses es más alta en la zona rural y en la sierra. A pesar de que Lima Metropolitana tiene una de las prevalencias más bajas del país (3 de cada 10 niños presentan anemia), concentra el mayor número de niños con anemia, con cifras similares al número de niños que obtenemos al sumar las cuatro o cinco regiones con mayor prevalencia en el país. Objetivo: Evaluar si la estrategia en educación alimentaria permite una reducción de la anemia en los niños de 6 a 35 meses. Métodos: Estudio retrospectivo en el que se aplicó una estrategia de educación alimentaria para la reducción de la anemia con evaluación pretest y postest. La educación alimentaria incluye componentes educativos, comunicacionales y tecnológicos. Se analizaron los datos correspondientes a las réplicas de la educación alimentaria en ocho regiones del Perú, de quienes cumplieron con una frecuencia de 2 veces por semana, durante dos meses. El reclutamiento de padres, madres o cuidadores (350) estuvo dirigido a quienes tenían niños de 6 a 35 meses, usuarios de un establecimiento de salud y con un diagnóstico de anemia utilizando como indicador la hemoglobina (Hb) del niño(a) al inicio y al final de la educación alimentaria. Resultados: El mayor porcentaje de niños se encuentra en el rango de 12 a 23 meses. El promedio general del diferencial de hemoglobina (evaluación final-evaluación inicial) fue de 1,07g/dL ± 0,80g/dL (p < 0,01), y se observó que el incremento era mayor mientras más alto era el nivel de anemia. Hubo diferencia entre Lima Metropolitana y las regiones (p < 0,01), y entre algunas regiones. Conclusiones: La educación alimentaria como estrategia que incluye preparaciones de recetas ricas en hierro, mejoró el estado de dicho mineral en los niños menores de 36 meses. Se sugiere la implementación de programas de educación alimentaria de acuerdo con la disponibilidad de alimentos en cada región.

    Evaluation of the content of critical nutrients and ingredients declared in the labeling of yogurts aimed at children, Lima-Peru in the year 2021.

    Currently, in Peru, there is very little education to understand the descriptions declared on food product labels, leading to unconscious and irresponsible purchases. This research aims to clearly present which yogurts are directed at this population and meet consumer desires. Objective: To determine the compliance of critical nutrients and ingredients declared on the labels of yogurts aimed at children in Lima, Peru, from October to December 2021, according to Peruvian regulations. Material and Methods: A cross-sectional inductive study using convenience sampling. Yogurts aimed at children sold in 4 major supermarkets in Lima, Peru, between October and December 2021 were collected. The yogurts were classified according to the Peruvian Technical Standard 202.092, and the compliance of critical nutrients declared on the yogurt labels was determined according to the Advertising Warning Manual established by Law No. 30021, the law promoting healthy food for children and adolescents, and the ingredients declared on the labels were compared with the Peruvian Technical Standard 209.038.

    Frecuencia de consumo de alimentos de los conductores de una empresa de transportes en Ventanilla, Perú, 2025

    Introducción: La alimentación desempeña un papel fundamental en la salud de las personas; sin embargo, en los conductores de transporte, los hábitos suelen estar condicionados por las largas jornadas laborales, la falta de tiempo y el acceso limitado a opciones nutritivas, esto genera una dieta poco equilibrada, por el predominio de productos rápidos y procesados. Objetivo: Identificar la frecuencia de consumo de alimentos de los trabajadores de la empresa de transportes en Ventanilla, Perú, durante el mes de julio de 2025. Materiales y métodos: Se desarrolló un estudio descriptivo, observacional, prospectivo y corte transversal. La muestra estuvo conformada por 40 conductores a quienes se le aplicó una encuesta con un cuestionario validado de frecuencia de consumo de alimentos considerando los grupos alimentarios, productos ultra procesados, así como la frecuencia de consumo de agua, azúcar y sal. Resultados: El 72.5% de los conductores consumía carnes blancas con mayor frecuencia, mientras que el 65% reportó una ingesta insuficiente de verduras y el 62.5% un bajo consumo de lácteos, el 80% manifestó consumir frutas y cereales diarios. En relación con los alimentos ultra procesados, 67.5% declaró consumir gaseosas y snack de forma habitual. En cuanto a la hidratación, solo el 32.5% alcanzó recomendaciones de 6 a 8 vasos diarios de agua, el 50% consumió entre 2 y 3 vasos, y el 17.5% apenas 1 vaso. Finalmente, el 70% de los participantes reconoció un consumo excesivo de azúcar y sal, superando lo recomendado por la Organización Mundial de la Salud. Conclusiones: Los conductores presentan una frecuencia de consumo poco equilibrada, con exceso de procesados y baja ingesta de alimentos frescos, lo que refuerza necesidad de promover estrategias de educación nutricional adaptadas a su realidad laboral.
