Publicación Acceso abierto Detección de parásitos en hortalizas de hoja expedidos en el mercado Unicachi en el distrito de Villa El Salvador – Lima 2025(Universidad Privada Norbert Wiener, 2025-12-11) Estela Orozco, Shirley Camila; Astete Medrano, Delia JessicaLos vegetales comercializados en nuestro país, especialmente en los mercados locales, suelen carecer de un control sanitario riguroso. Muchos de ellos están expuestos al suelo y son manipulados sin condiciones higiénicas adecuadas, lo que favorece la presencia de parásitos intestinales que representan un riesgo para la salud del consumidor. En este estudio se evaluaron hortalizas de hoja como lechuga, espinaca, acelga y brócoli, expendidas en el mercado Unicachi del distrito de Villa El Salvador, Lima. Objetivos: Determinar la presencia de parásitos en hortalizas de hojas expendidos en el mercado Unicachi en el distrito de villa el salvador. Objetivos específicos, 1) Identificar los parásitos protozoarios encontrados en hortalizas de hoja expendidos en el mercado Unicachi en el distrito de villa el salvador. 2) Identificar los parásitos helmintos encontrados en hortalizas de hoja del mercado Unicachi en el distrito de villa el salvador. Resultados: Se recolectaron y analizaron 48 muestras de lechuga, espinaca, acelga y brócoli, procedentes de tres puestos diferentes. El 93.75% de las muestras resultaron positivas a uno o más parásitos intestinales. Entre los protozoarios más frecuentes se identificaron Chilomastix mesnili, Endolimax nana y Entamoeba coli, mientras que entre los helmintos se hallaron Strongyloides stercoralis y Ascaris lumbricoides. Las espinacas y lechugas fueron los vegetales más contaminados. Conclusiones: Los resultados muestran una alta contaminación parasitaria en hortalizas de hoja expendidas en el mercado Unicachi, siendo los protozoarios los más frecuentes. Se evidencian deficiencias en las condiciones sanitarias de los productos vegetales, lo cual representa un riesgo para los consumidores.Ítem Acceso abierto Efficacy of the Mediterranean diet in reducing the risk of breast cancer in premenopausal and postmenopausal women(Universidad Privada Norbert Wiener, 2020-12-27) Ramos Astucuri, Norma; Llapa Lescano, Lenny Nataly; Avila Vargas Machuca, Jeannette GiselleObjective: Systematize the evidence on the effectiveness of the Mediterranean diet in reducing the risk of breast cancer in premenopausal and postmenopausal women. MATERIAL AND METHOD: The study has a systematic, observational and retrospective review design; of articles with full text, which identified their grade or quality of evidence according to the Grade System. The population was made up of 10 articles obtained from the following databases Pubmed, Embase, Cochrane Library, Dialnet, Scielo and Lilacs. 70% correspond to systematic reviews and 30% to randomized clinical trials, from the countries of the United States 30% (03/10), Spain 30% (03/10), Austria 20% (02/10), China 10% ( 01/10) and Italy 10% (01/10). Results: All the studies reviewed demonstrate that the Mediterranean diet is effective in reducing the risk of breast cancer in premenopausal and postmenopausal women. Conclusions: The Mediterranean diet, based on a balanced diet, very low in fats, sugars and salt; and rich in fruits, vegetables, legumes and whole grains is effective in reducing the risk of breast cancer in premenopausal and postmenopausal women; In postmenopausal women its protective effect is higher.Publicación Acceso abierto Evaluación de residuos de plaguicidas de cultivos hortícolas apio (apium graveolens l.) en el valle Chillón-Lima 2024(Universidad Privada Norbert Wiener, 2025-04-29) Salvador Echevarria, Guadalupe Sintia; Tapia Salas, Vanessa; Ramos Jaco, Antonio GuillermoObjetivo: Evaluar los niveles de residuos de plaguicidas de cultivos hortícolas apio (apium graveolens L.) del Valle Chillón. Metodología: Está investigación se basó en un enfoque cuantitativo, de tipo aplicada, de diseño semi experimental, de nivel exploratorio-descriptivo, de corte transversal; la población correspondió a cultivos de hortalizas (Apio) cosechadas en dos parcelas del Valle del Chillón en Lima, se tomaron 20 muestras de cultivo apio, 10 muestras ubicadas en el poblado de Trapiche y 10 muestras ubicadas en el poblado de Zapan; el muestreo fue aleatorio. Se empleó un instrumento para la observación de la zona de recolección y otro instrumento para los resultados del análisis. Resultados: los plaguicidas más utilizados fueron: Atrazine, Azoxystrobin, Carbendazim, Clothianidin, Fludioxonil, Imidacloprid, Phenthoate, Propiconazole, Omethoate, Profenofos, Chlorantraniliprole, Indoxacarb. Methomyl, Propamocarb, Proquinazid. Al evaluar el cumplimiento de las normativas nacionales e internacionales (Codex Alimentarius) los plaguicidas que sobrepasaron los límites máximos permisibles fueron: Atrazine, Azoxystrobin, Carbendazim, Phenthoate, Propiconazole, Profenofos, Cholantraniliprole, Methomyl. Los riesgos potenciales para la salud humana asociados con la ingestión de alimentos contaminados con residuos de plaguicidas pueden estar relacionados a riesgos reproductivos, riesgos neurológicos, riesgos orgánicos, riesgos genéticos. Conclusiones: Al evaluar los niveles de residuos de plaguicidas de cultivos hortícolas apio (apium graveolens L.) del Valle Chillón, se determinó que algunos de ellos se encuentran en concentraciones peligrosas para la salud humana.Ítem Acceso abierto Level of Knowledge about the consumption of fruits and vegetables in pregnant women at the Defensores de la Patria Health Center, Lima 2021(Universidad Privada Norbert Wiener, 2022-04-18) Cabrera Gallegos, Ada Liliana; Luján Torrealva, Franco SilvioGeneral Objective: To evaluate the level of knowledge about the consumption of fruits and vegetables in pregnant women treated at the Defensores de la Patria Health Center in 2021. Material and Method: The study was descriptive, with a quantitative, cross-sectional, non-experimental approach. A survey was used as an instrument, which was made up of 20 closed, single-option questions. The sample consisted of 60 pregnant women who are treated at the Defensores de la Patria-Ventanilla Health Center, Lima 2021. Results: Regarding the level of knowledge of the pregnant women surveyed about the consumption of fruits and vegetables during pregnancy, it was observed that only 21.67% of pregnant women (n=13) obtained a high level of knowledge, 70% of pregnant women ( n=42) obtained a medium level of knowledge and 8.33% of pregnant women (n=5) obtained a low level of knowledge. However, the majority of pregnant women surveyed are unaware of aspects such as the main functions in the body and the benefits of consuming fruits and vegetables during pregnancy. Conclusion: The level of knowledge about the consumption of fruits and vegetables in the pregnant women who are treated at the Defensores de la Patria Health Center in 2021, have a medium level of knowledge with 70% of the pregnant women surveyed. The questions that are most associated with erroneous answers in the respondents are those related to knowledge about the functions and benefits of consuming fruits and vegetables during pregnancy.Ítem Acceso abierto Nutritional knowledge and consumption of fruits and vegetables in the administrative staff of the Norbert Wiener University, 2022.(Universidad Privada Norbert Wiener, 2021-02-03) Campos Gonzales, Sandra Estrella; León Cáceres, Johanna del CarmenThis research aimed to determine the relationship between nutritional knowledge and the consumption of fruits and vegetables among the administrative staff of the Norbert Wiener University, 2022. A deductive method was applied, with a basic, quantitative approach, since the measurement of variables was quantifiable. Its design was non-experimental, and the sample consisted of 106 administrative staff from Norbert Wiener University, who were given two questionnaires to measure the research variables. The results showed, through the Spearman Rho coefficient, a significance of 0.000, which, being less than 0.05, verifies the research hypothesis. The conclusions showed that there is a relationship between nutritional knowledge and the consumption of fruits and vegetables among the administrative staff of the Norbert Wiener University, 2022. It is recommended to publish the results to raise awareness about the importance of keeping nutritional information updated.Ítem Acceso abierto Risk factors for gastric cancer in the adult population(Universidad Privada Norbert Wiener, 1905-07-09) Callacna Silva, Miriam del Pilar; Deza Arana, María Sabina; Rivera Lozada de Bonilla, OrianaMethodology: It is a systematic review of 10 articles, 30% from Colombia, 20% from Peru, Mexico and Ecuador respectively and 10% from Panama. The majority of articles are case-control studies with 70% and 30% cross-sectional studies. These articles were obtained from the Pubmed and scielo databases. Results: the 10 articles reviewed show that the risk factors for gastric cancer are: 40% salt, 30% alcohol consumption, 20% having a family history, not using adequate refrigeration to preserve food and low level of education, as well as foods exposed to smoke, cooking with firewood, consuming reheated foods, low consumption of fruits and vegetables and tobacco respectively. And 10% have inadequate eating habits, physical inactivity and a sedentary lifestyle, stress, pharmacological habits, as well as low socioeconomic level, being over 50 years old, having H. Pylori, consumption of red pork meat and sausages. 3 times a week and be female. Conclusion: High consumption of salt, as well as alcohol, constitutes 70% of the risk factors for gastric cancer.
