Ítem Acceso abierto Acceptability and antioxidant capacity of a blueberry beverage formulation in Norbert Wiener University students in 2021.(Universidad Privada Norbert Wiener, 2021-12-09) Gamarra Espinoza, Gino Francesco; Espinoza Rado, Erika PaolaThis project had 2 phases. In the First, a survey model was carried out that, through a 5-point hedonic scale corresponding to smell, flavor and texture, is capable of determining which of the 3 formulations presented is the most accepted (F1 = 65%, F2 = 70% F3 = 55%).In the second phase I carry out an analysis of the antioxidant capacity in trolox equivalents to the winning formulation (F2=70%) resulting from the sensory evaluation survey. The sample was evaluated in the Molina total quality laboratories of the Universidad Nacional Agraria La Molina and the points to be evaluated were antioxidant capacity and total anthocyanins. Then the results were as follows: antioxidant capacity was obtained with a measurement of 753,941 ± 33,177 µmol TROLOX eq./g. sample and regarding the total anthocyanin count, the results were 5.79 ± 0.03 in mg./100g. In conclusion, the results obtained from the sensory acceptability test applied to the three blueberry drink formulations determined that formulation No. 2 was the winner, after which the antioxidant capacity and total anthocyanins of the sample were found. No. 2, the results of the first compound far exceed similar formulations (by more than 500%), while in the second compound a concentration greater than 50% is observed. Objective: Determine the level of acceptability and nutritional value of cookies based on moringa, cañihua and quinoa in fourth year students secondary school of IE 1228 Leoncio Prado Gutiérrez Lima 2023. Methodology: The research is applied with a non-experimental design and transversal. A cookie was made from moringa flour, cañihua and quinoa, calculated the nutritional value using the table of food composition and the acceptability of the cookie was evaluated through the attributes of flavor, color, crunchiness and appearance using the hedonic scale sheet applied to 90 volunteers. The objective was to evaluate the acceptability of a nectar made with alfalfa, mango, and camu camu among Adventists in Lima, Peru. Methodology: Applied research, experimental, prospective, and cross-sectional design. A nectar was made using alfalfa, mango, and camu camu, its nutritional value calculated, and sensory characteristics such as odor, taste, and color were evaluated with 100 volunteers from the Seventh-Day Adventist Church in the Independencia district of Lima, Peru. Results: The nectar made from alfalfa, mango, and camu camu contains 23 mg of vitamin A and 504.26 mg of vitamin C, with 53% acceptance for color, 64% for odor, and 71% for taste among Adventists in Lima, Peru. Objective: To determine the nutritional content and acceptance of a hypoglycemic breakfast in hospitalized patients in the surgery service during June 2023. Methodology: This is a descriptive study with a mixed approach. Non-experimental, prospective, and cross-sectional design. 30 hypoglycemic breakfasts served at Hospital María Auxiliadora during June 2023 were analyzed, finding the following nutritional content: 327.75+77.86 kcal, 14.21+4.24 g of protein, 44.23+10.62 g of carbohydrates, 12.25+3.66 g of fats, and 5.83+2.90 g of fiber. Normal adequacy was found in 50% for energy (kcal), 16.7% for fats, 33.3% for carbohydrates, and 8.3% for fiber. Regarding vitamins, 25% showed normal adequacy for Vitamin A, 8.33% for Niacin, and 66.67% for Calcium. Conclusion: It is necessary to include a nutrition professional as part of the team for the comprehensive treatment of people with diabetes.Ítem Acceso abierto Analysis of the content of arsenic, lead, and cadmium in roots and leafy vegetables from the wholesale market of Lima, Peru - 2023(Universidad Privada Norbert Wiener, 2023-05-25) Gonza Togas, Yuli; Espinoza Rado, Erika PaolaObjective: To evaluate the content of heavy metals in roots and leafy vegetables from the wholesale market of Lima in 2023. Methodology: A quantitative, analytical, and cross-sectional approach was used. Samples of potato, carrot, lettuce, and spinach (500g each) were collected from the wholesale market in Lima, Peru, in 2023. AOAC analysis methods were applied for each heavy metal. A 95% confidence level was used to determine whether the concentrations of contaminants exceeded the established limits. The Wilcoxon non-parametric test was used with a p-value of 0 and a significance level of 5%. Results: The statistical test confirmed that the presence of heavy metals was below the established limits. The p-value was 0 at a 5% significance level, confirming that the median concentrations of arsenic, lead, and cadmium in the tested vegetables were lower than the maximum allowed by regulations. Conclusions: The analysis of arsenic, lead, and cadmium content in the roots and leafy vegetables from the wholesale market of Lima, Peru, in 2023 showed that the concentrations were lower than the national regulatory limits. If a person is overweight or obese, the possibility of developing diabetes, high blood pressure, cardiovascular diseases, among others, increases in the future. Methodology: This research will be carried out under the hypothetical method deductive, The approach is quantitative, the type is applied, non-experimental design with cross-sectional and correlational section, the sample was made up of 200 adolescents from an educational institution in Metropolitan Lima. Results: A significant correlation is evident since P=0<0.002 and this is less than 0.05, similarly, the level of correlation is 0.221 between the indicators anthropometric and eating habits. On the other hand, the body mass index of the students of an educational institution in Metropolitan Lima, 9.5% (19) have a classification of obesity, 90.00% (180) have a classification of overweight and only 0.5% (1) have a normal classification. Likewise, the levels of the eating habits of the students of an educational institution in Lima Metropolitan, 66.5% (133) have healthy eating habits and 33.5% (67) have unhealthy eating habits. The “Punica granatum” pomegranate has polyphenols such as: ellagic acid, punicalagin, among the most important; They have been studied in different non-communicable conical diseases such as cardiovascular diseases and cancer. In the present secondary research titled as Critical Review: Anti-inflammatory effect of Punica granatum in patients with cardiovascular disease; whose objective was to know the effect of pomegranate consumption on pro-inflammatory biomarkers, serum lipid levels and blood pressure levels. The clinical question was: Would the consumption of pomegranate (Punica Granatum L.) or its bioactive components produce anti-inflammatory effects in patients with cardiovascular disease? The evidence-based nutrition (NuBE) methodology was used. The search of the scientific literature was carried out in Spanish and English. The databases consulted were SCOPUS, WOS, PUBMED/MEDLINE AND EMBASED. 28 articles were found and 9 were selected, for which the CASPe tool was used. The selected study was “The effects of pomegranate supplementation on biomarkers of inflammation and endothelial dysfunction: A meta-analysis and systematic review”. The critical commentary revealed that the consumption of substances derived from pomegranate could help reduce inflammatory biomarkers, as well as serum lipid levels and blood pressure. Future studies are necessary to establish a recommended dose, as a complementary aid to pharmacological treatment.Ítem Acceso abierto Antioxidant capacity and sensory analysis of an ice cream made with prickly pear (opuntia ficus-indica l.) and tumbo (passiflora tripartita kunth)(Universidad Privada Norbert Wiener, 2022-10-17) Salazar Mendoza, Gabriela; Inocente Camones, Miguel AngelObjective: Evaluate the antioxidant capacity and overall acceptability of an ice cream made from a mixture of prickly pear (Opuntia ficus-indica L.) and passion fruit (Passiflora tripartita Kunth). Methodology: For the formulation and preparation of the ice cream, unit operations were performed according to the investigators' procedures under the parameters of Peruvian Technical Standards. Sensory analysis was carried out among ice cream consumers, evaluating appearance, taste, color, smell, and general acceptability using a Likert scale. The antioxidant capacity was evaluated using a spectrophotometric method with the DPPH radical. Phenolic compounds were analyzed according to the method described by Sánchez et al. (2013), Hernández et al. (2019), and Kim et al. (2019), using the Folin-Ciocalteu reagent and UV-visible spectrophotometry. Results: For taste, Sample No.1 (59%) had the highest acceptance, Sample T2 (37%) had the lowest, and Sample T3 (42%) showed a significant number of "liked it quite a lot". A hypothetical deductive method was used, as well as a type of research applied with a correlational level and a non-experimental approach in a sample of 130 postpartum mothers who responded to the corresponding questionnaires, which met the validity and reliability processes necessary for data collection. Materials and methods: Type of study quantitative and descriptive cross-sectional, correlational approach, with a population consisting of 65 people. To collect information, initially, anthropometric measurements (weight, height, waist circumference) were used; Subsequently, questionnaires such as: Beck Inventory (BDI-II), Pittsburgh Sleep Quality Index (PSQI) and the International Physical Activity Questionnaire (IPAQ) were used as associated factors of said research. Results: The cut of the waist circumference was taken in both sexes, the mean and standard deviation were 95.24 ± 12.32 in men and 83.90 ± 10.23 in women showing moderate risk and classified as high risk 10 men (40%) and 15 women (37.50 %) indicating android obesity. 92% of men and 87.50% of women do not have depression, while according to sleep quality, 48% of men and 32.50% of women have poor quality of sleep and require medical attention. The present secondary research titled as a critical review: Oropharyngeal Colostrum Positively Modulates the Inflammatory Response in Preterm Neonates aimed to evaluate the effects of oropharyngeal breast milk administration on inflammatory signaling in extremely premature babies. The clinical question was: Is there a positive relationship between the administration of oropharyngeal colostrum in very low weight premature newborns on inflammatory markers? The CASPE critical reading tool methodology was used for the Clinical Trial, which has a level of evidence I and a strong Grade of Recommendation, according to the researcher's expertise. The critical comment allowed us to conclude that administering colostrum during the first days would have a therapeutic effect at an anti-inflammatory level, so starting at an opportune time could contribute positively to the tolerance of oral feeding.Ítem Acceso abierto Body composition in patients hospitalized at the national hospital dos de mayo, December 2022(Universidad Privada Norbert Wiener, 2023-04-13) Flores Espinoza, Royer Marino; Mauricio Alza, Saby MarisolThere are different methods to determine nutritional diagnosis, including body composition analysis such as anthropometric indicators and bioimpedance. Objective: To describe the body composition of patients hospitalized at the National Hospital Dos de Mayo, December 2022. Methodology: Descriptive study of a basic type, with a quantitative approach, non-experimental design, prospective, and cross-sectional. In 78 patients hospitalized in the Medicine Service, protein and fat reserves were calculated from anthropometry and Bioelectrical Impedance Analysis (BIA). The protein reserve, using anthropometry, showed that 35.90% of the patients had muscle depletion using Arm Circumference (AC), and the percentage increased to 41.03% when using the Arm Muscle Circumference (AMC). Using BIA, Lean Mass (LM) was classified as “Low” in 14.10%, and Muscle Mass (MMus) increased to 37.18%. For Fat Reserve, anthropometry showed that 58.97% of patients had excess Triceps Skinfold (TSF), and 48.72% had abdominal circumference (AC) indicating a risk of developing metabolic and cardiovascular diseases. Using BIA, 44.87% of the population was classified as “High.” Conclusion: The use of BIA is recommended within diagnostic equipment to allow a better analysis of body composition, which would contribute to improving the design of nutritional intervention plans.Ítem Acceso abierto Body fat using bioimpedance in hospitalized patients of Hospital Dos de Mayo, December 2022(Universidad Privada Norbert Wiener, 2020-12-04) Callata Martinez, Tarsis Alondra; Mauricio Alza, Saby MarisolThe Body Mass Index (BMI) is not a sufficient indicator for diagnosing body fat. This study aimed to calculate the body fat percentage using bioimpedance in patients at the Dos de Mayo Hospital in December 2022. The study used a non-experimental, prospective-cross-sectional design and a sample of 137 hospitalized patients. The data collection technique relied on clinical history and information provided by the nutritionist as part of the nutritional care process, including bioimpedance to determine body fat percentage. The results showed that only 48.2% of patients had a normal body fat percentage, 44.5% were diagnosed with elevated body fat, and 7.3% had low body fat. The elevated diagnosis was most prevalent in males (54.1%), with 21.3% having a personal history of diabetes mellitus and cardiovascular diseases. In conclusion, new procedures are needed in clinical nutritional assessment that includes other indicators beyond BMI.Ítem Acceso abierto Burnout syndrome and work stress in nurses at the surgical center of a National Hospital in Lima, 2022.(Universidad Privada Norbert Wiener, 2021-04-08) Gonzales Pérez, Priscila Abigail; Dávila Córdova, Jennifer EstefaniaType 2 diabetes (DM2) is associated with modifiable risk factors such as malnutrition and sedentary lifestyle, directly linked to diseases like cancer and cardiovascular diseases, causing deaths worldwide. The aim of this research was to critically review scientific articles regarding the positive effects of physical exercise on oxidative stress markers in patients with DM2. The clinical question was: In adult patients with type 2 diabetes, can physical exercise reduce oxidative stress levels? Evidence-Based Nutrition (NuBE) methodology was applied. A search in EBSCO, Sage Journals, Frontiers in Endocrinology, Scopus, Redalyc, Science Direct, Springer, PubMed, Scielo, and Medwave yielded 38 articles, of which 25 were selected and evaluated using the CASPE tool. The final selected randomized clinical trial was "Effectiveness of High-Intensity Interval Training Compared to Moderate-Intensity Continuous Training in Reducing Oxidative Stress in Adult Patients with Type 2 Diabetes: CAT," which has an I evidence level and strong recommendation grade. The critical commentary concluded that, in patients aged 50-70 years with controlled DM2, both moderate-intensity continuous training and high-intensity interval training provide similar benefits in normalizing lipid profile markers and improving general physical condition. However, high-intensity interval training was more effective in reducing oxidative stress damage markers.Ítem Acceso abierto Caffeine and total sugars in energy drinks sold in supermarkets in Chosica,2023(Universidad Privada Norbert Wiener, 2024-06-05) Muñoz Castillo, José Manuel; Espinoza Rado, Erika PaolaEnergy drinks are very popular among young people. Their main ingredients include caffeine and sugar, but previous studies have shown differences between the amount of caffeine and total sugars in the product compared to the amount declared on the label. Methodology: The study population included 10 energy drinks. Two data collection forms were used. Results: Regarding caffeine, it ranged from 28.95 to 78.48 mg/100ml, with 50% exceeding the maximum caffeine limit (>35mg/100ml), and 80% exceeding the declared value on the label. Regarding total sugars, it ranged from 0 to 9.50 g/100ml, with 60% exceeding the maximum sugar range in drinks (≥5g/100ml). Conclusion: Energy drinks contain high amounts of caffeine and total sugars, exceeding the values set by NTP 103.003.2022 and Law No. 30021. Most also do not comply with the declared content on the label, with the Monster Energy Ultra Sugar-Free drink being the most concerning as it contains four times more caffeine than indicated.Ítem Acceso abierto Calorimetry and food consumption in people with psoriasis and psoriasis arthritis from an association in Lima-Peru, 2023(Universidad Privada Norbert Wiener, 2024-05-29) Pineda Quispe, Jenny Tatiana; Mauricio Alza, Saby MarisolThe design of a nutritional plan for a person with psoriasis and psoriatic arthritis requires knowledge of nutritional requirements as well as food consumption to identify eating habits. Objective: To determine the caloric requirement using calorimetry and food consumption in people with psoriasis and psoriatic arthritis from an association in Lima, Peru, in May 2023. Methodology: This is a descriptive study with a quantitative approach, non-experimental, prospective, and cross-sectional. Results: 17 people with psoriasis and psoriatic arthritis were included, 76.5% of whom were women, and 47.1% were between 20 to 40 years old. 64.7% of the population had more than 10 years of illness. Their weight was 72.16+15.70 kg, height 1.61+0.06 m, and age 44.05+13.05 years. Calorimetry indicated 1,582.64+513.20 kcal required. 47.06% were overweight. 58.82% consumed vegetables 2 times a week. Biscuits were the most consumed snacks (41.2%), and 52.9% consumed snacks once a week. 41.2% consumed less than half a teaspoon of salt daily. The clinical question was: Will supplementation with cholecalciferol improve bone mineral status expressed in parathormone levels of men and women over 18 years of age with CKD V on hemodialysis? The Evidence-Based Nutrition (NuBE) methodology was used. The information search was carried out in PUBMED, SCIELO, DIALNET AND REDIB, finding 44 articles, 10 being selected that have been evaluated by the CASPE critical reading tool, finally selecting the Randomized Clinical Trial entitled Cholecalciferol in patients on hemodialysis: randomized study, double-blind, proof of concept and safety Cholecalciferol in hemodialysis patients: a randomized, double-blind, proof of concept and security which has a level of evidence B I and Grade of STRONG Recommendation, according to the expertise of the researcher. The critical comment allowed us to conclude that cholecalciferol is effective and safe, and does not negatively affect calcium, phosphorus, PTH levels or vascular calcifications.
