Ítem Acceso abierto Acceptability and antioxidant capacity of a blueberry beverage formulation in Norbert Wiener University students in 2021.(Universidad Privada Norbert Wiener, 2021-12-09) Gamarra Espinoza, Gino Francesco; Espinoza Rado, Erika PaolaThis project had 2 phases. In the First, a survey model was carried out that, through a 5-point hedonic scale corresponding to smell, flavor and texture, is capable of determining which of the 3 formulations presented is the most accepted (F1 = 65%, F2 = 70% F3 = 55%).In the second phase I carry out an analysis of the antioxidant capacity in trolox equivalents to the winning formulation (F2=70%) resulting from the sensory evaluation survey. The sample was evaluated in the Molina total quality laboratories of the Universidad Nacional Agraria La Molina and the points to be evaluated were antioxidant capacity and total anthocyanins. Then the results were as follows: antioxidant capacity was obtained with a measurement of 753,941 ± 33,177 µmol TROLOX eq./g. sample and regarding the total anthocyanin count, the results were 5.79 ± 0.03 in mg./100g. In conclusion, the results obtained from the sensory acceptability test applied to the three blueberry drink formulations determined that formulation No. 2 was the winner, after which the antioxidant capacity and total anthocyanins of the sample were found. No. 2, the results of the first compound far exceed similar formulations (by more than 500%), while in the second compound a concentration greater than 50% is observed. Objective: Determine the level of acceptability and nutritional value of cookies based on moringa, cañihua and quinoa in fourth year students secondary school of IE 1228 Leoncio Prado Gutiérrez Lima 2023. Methodology: The research is applied with a non-experimental design and transversal. A cookie was made from moringa flour, cañihua and quinoa, calculated the nutritional value using the table of food composition and the acceptability of the cookie was evaluated through the attributes of flavor, color, crunchiness and appearance using the hedonic scale sheet applied to 90 volunteers. The objective was to evaluate the acceptability of a nectar made with alfalfa, mango, and camu camu among Adventists in Lima, Peru. Methodology: Applied research, experimental, prospective, and cross-sectional design. A nectar was made using alfalfa, mango, and camu camu, its nutritional value calculated, and sensory characteristics such as odor, taste, and color were evaluated with 100 volunteers from the Seventh-Day Adventist Church in the Independencia district of Lima, Peru. Results: The nectar made from alfalfa, mango, and camu camu contains 23 mg of vitamin A and 504.26 mg of vitamin C, with 53% acceptance for color, 64% for odor, and 71% for taste among Adventists in Lima, Peru. Conclusions: The nectar provides a significant contribution of vitamins A and C, important nutrients for the immune system.Publicación Acceso abierto Actividad física y salud mental en adolescentes de 14 a 16 años de edad en una Institución Educativa de Lima, 2025(Universidad Privada Norbert Wiener, 2025-12-15) Jeronimo Zapata, Maria Helen; León Cáceres, Johanna del CarmenObjetivo: “Determinar la relación entre actividad física y salud mental en adolescentes de 14 a 16 años de edad en una Institución Educativa de Lima, 2025”. Materiales y métodos: estudio cuantitativo, correlacional, utilicé un cuestionario tipo Likert con dos variables: actividad física y salud mental; aplicado a una muestra de 113 adolescentes previa evaluación. Resultados: del total de adolescentes encuestados 49% tienen 16 años de edad, 37% 15 años y 14% 14 años, de los cuales 51% son de sexo masculino y 49% femenino. En cuanto al grado académico; 37% pertenecen al quinto grado, 34% al cuarto grado y 29% al tercero. Referente a la variable actividad física: el 59% realizan actividad física en un nivel regular, 27% alto, 14% bajo; Referente a la variable salud mental: 52% tienen un regular nivel de salud mental, 44% alto y el 4% tienen un nivel bajo de salud mental. Se consideró la prueba de Kolmogorov Smirnov y el coeficiente de relación Rho de Sperman siendo el p-valor 0.003 < a 0.05 que indica la correlación entre ambas variables y un coeficiente de correlación de 0. 275, que viene a ser una correlación positiva baja, por lo tanto se acepta la hipótesis alterna. El objetivo de nuestra investigación fue Describir las actividades del Proceso de atención nutricional registradas en la Historia Clínica en pacientes quirúrgicos atendidos en el Hospital María Auxiliadora durante el año 2023, a partir de la revisión de 400 historias clínicas en pacientes quirúrgicos atendidos entre agosto y noviembre de 2023, recolectamos información del registro de las actividades que comprende el PAN, encontramos que, el 47.5% tienen entre 30 a 59 años de edad, presentan 1.13+0.63 días de ayuno. El 51.5% presenta estancia hospitalaria prolongada. En cuanto a los indicadores nutricionales, el 100% no registra IMC, el 99% y el 87.75% registra peso y talla respectivamente. El tamizaje nutricional se registró entre 90 a 100%, el 94% registra la dieta, el 96% no registra las calorías, el 90% registra macronutrientes, solo el 2% registra monitoreo nutricional. Conclusiones: Es necesario el registro de las actividades del proceso de atención nutricional considerando que nos permite modificar la estrategia garantizando el éxito de la terapéutica del paciente quirúrgico.Ítem Acceso abierto Adequacy and acceptance of the hypoglucid breakfast in the hospitalized patient of the surgery service, june 2023(Universidad Privada Norbert Wiener, 2024-09-18) Barcena Quispe, Julio Jimmy; Mauricio Alza, Saby MarisolNutrition is essential in controlling blood glucose in people with diabetes. Objective: To determine the nutritional content and acceptance of a hypoglycemic breakfast in hospitalized patients in the surgery service during June 2023. Methodology: This is a descriptive study with a mixed approach. Non-experimental, prospective, and cross-sectional design. 30 hypoglycemic breakfasts served at Hospital María Auxiliadora during June 2023 were analyzed, finding the following nutritional content: 327.75+77.86 kcal, 14.21+4.24 g of protein, 44.23+10.62 g of carbohydrates, 12.25+3.66 g of fats, and 5.83+2.90 g of fiber. Normal adequacy was found in 50% for energy (kcal), 16.7% for fats, 33.3% for carbohydrates, and 8.3% for fiber. Regarding vitamins, 25% showed normal adequacy for Vitamin A, 8.33% for Niacin, and 66.67% for Calcium. Conclusion: It is necessary to include a nutrition professional as part of the team for the comprehensive treatment of people with diabetes.Publicación Acceso abierto Análisis de la capacidad antioxidante y vitamina C de la pulpa de sanky, corryocactus brevistylus, proveniente de dos departamentos del Perú(Universidad Privada Norbert Wiener, 2024-12-13) Altamirano Rimarachín, Néstor; Espinoza Rado, Erika PaolaObjetivo General: Analizar la capacidad antioxidante y el contenido de vitamina C de la pulpa de la fruta Sanky, Corryocactus brevistylus, proveniente de dos departamentos del Perú. Material y Método: Las muestras de la fruta Sanky, Corryocactus brevistylus, fueron obtenidas de los departamentos de Arequipa y Ayacucho y trasladados en cadena de frio al laboratorio en Lima, para el análisis físico - químico. Además, para el recojo de dicho fruto, se esperó la temporada de cosecha, los meses de junio y julio 2023. Para dicho análisis físico - químico de la fruta Sanky, proveniente de dos departamentos del Perú, se plantea una hipótesis bilateral. Se quiere demostrar la diferencia significativa en ambas muestras para inferir estadísticamente los resultados mediante el uso del software estadístico RStudio. Resultados: Se determinó por medio de análisis físico-químico, la capacidad antioxidante, Vitamina C, pH y grados brix dando los siguientes resultados: Muestra de Arequipa, capacidad antioxidante: 62387 exp. En micromol de trolox/100g. y en la muestra de Ayacucho, fue en promedio 52661.9 micromol de trolox/100g. La vitamina C para la muestra de Arequipa fue de 31mg/100g. Y en la muestra de Ayacucho en promedio fue 30mg/100g. En el pH en la muestra de Arequipa fue 3.2 y la muestra de Ayacucho en promedio fue de 3.1. Finalmente, en los sólidos solubles en promedio para la muestra de Arequipa fue 5.4 y la muestra de Ayacucho fue de 5.8 respectivamente. Conclusiones: El estudio se realizó en muestra fresca de la pulpa de la fruta Sanky, Corryocactus brevistylus, según la hipótesis planteada a un 95% de confianza se infiere que hay diferencia significativa en las dos muestras de la fruta Sanky procedente de los departamentos del Perú. La capacidad antioxidante y la vitamina C es mayor en la muestra de Arequipa que en la muestra de Ayacucho. En cuanto al pH en la muestra de Arequipa es ligeramente mayor al de Ayacucho. Sólidos solubles (Grados Brix) es ligeramente mayor en la muestra de Ayacucho que el de Arequipa.Ítem Acceso abierto Analysis of the content of arsenic, lead, and cadmium in roots and leafy vegetables from the wholesale market of Lima, Peru - 2023(Universidad Privada Norbert Wiener, 2023-05-25) Gonza Togas, Yuli; Espinoza Rado, Erika PaolaObjective: To evaluate the content of heavy metals in roots and leafy vegetables from the wholesale market of Lima in 2023. Methodology: A quantitative, analytical, and cross-sectional approach was used. Samples of potato, carrot, lettuce, and spinach (500g each) were collected from the wholesale market in Lima, Peru, in 2023. AOAC analysis methods were applied for each heavy metal. A 95% confidence level was used to determine whether the concentrations of contaminants exceeded the established limits. The Wilcoxon non-parametric test was used with a p-value of 0 and a significance level of 5%. Results: The statistical test confirmed that the presence of heavy metals was below the established limits. The p-value was 0 at a 5% significance level, confirming that the median concentrations of arsenic, lead, and cadmium in the tested vegetables were lower than the maximum allowed by regulations. Conclusions: The analysis of arsenic, lead, and cadmium content in the roots and leafy vegetables from the wholesale market of Lima, Peru, in 2023 showed that the concentrations were lower than the national regulatory limits. If a person is overweight or obese, the possibility of developing diabetes, high blood pressure, cardiovascular diseases, among others, increases in the future. For statistical significance, the Pearson correlation test was considered at a confidence level. of 95%. Results: In the study group, males predominate (61.2%), according to the survey carried out, 79.1% are Catholic, (46.3%) attended secondary school (the parents) and 80.6% have SIS. The nutritional status of the children presented T/E (86.6%), (91.0%) P/E and (82.1%) P/T with normal values, predominating the diagnosis (71.6%) normal. Also the average age of children is 21.79 months, the average per family is 2 children, the average weight and height was (10.88kg) (80.19 cm). With respect to the values of the diet, a difference can be seen. average consumption of 724.35 kcal, 14.94g. of protein, 109.73g. of carbohydrates (being of medium level of quality) and fats of 19.54g. being of low level of quality, iron obtaining 9.74 mg medium level of quality. Regarding the children evaluated, 46.2% had mild anemia and 15% had moderate anemia. Conclusion: A relationship was demonstrated between the degrees of anemia and the quality of the diet in children under 36 months, according to the degrees of anemia, mild anemia followed by moderate anemia stands out. Nutritional risk factors associated with this condition include excess weight and abdominal fat accumulation. Objective: To determine the nutritional, anthropometric, and biochemical status in pre-surgical adult women with breast cancer at a specialized institute - 2017. A descriptive observational cross-sectional study was conducted on 215 women with pre-surgical breast cancer aged 19 to 59 years, evaluated from July to October 2017. Anthropometric and biochemical data were collected. The data were processed using SPSS version 22. Of the 215 women with breast cancer, 74.9% were in the 40 to 59-year age group. Of these, 68.3% had excess weight (40.9% overweight and 27.4% obese), and 90.7% had elevated waist circumference. In the biochemical measures, 32.2% had anemia, and 44.9% had some degree of immunosuppression. Methodology: This research will be carried out under the hypothetical method deductive, The approach is quantitative, the type is applied, non-experimental design with cross-sectional and correlational section, the sample was made up of 200 adolescents from an educational institution in Metropolitan Lima. Results: A significant correlation is evident since P=0<0.002 and this is less than 0.05, similarly, the level of correlation is 0.221 between the indicators anthropometric and eating habits. On the other hand, the body mass index of the students of an educational institution in Metropolitan Lima, 9.5% (19) have a classification of obesity, 90.00% (180) have a classification of overweight and only 0.5% (1) have a normal classification. Likewise, the levels of the eating habits of the students of an educational institution in Lima Metropolitan, 66.5% (133) have healthy eating habits and 33.5% (67) have unhealthy eating habits. The “Punica granatum” pomegranate has polyphenols such as: ellagic acid, punicalagin, among the most important; They have been studied in different non-communicable conical diseases such as cardiovascular diseases and cancer. In the present secondary research titled as Critical Review: Anti-inflammatory effect of Punica granatum in patients with cardiovascular disease; whose objective was to know the effect of pomegranate consumption on pro-inflammatory biomarkers, serum lipid levels and blood pressure levels. The clinical question was: Would the consumption of pomegranate (Punica Granatum L.) or its bioactive components produce anti-inflammatory effects in patients with cardiovascular disease? The evidence-based nutrition (NuBE) methodology was used. The search of the scientific literature was carried out in Spanish and English. The databases consulted were SCOPUS, WOS, PUBMED/MEDLINE AND EMBASED. 28 articles were found and 9 were selected, for which the CASPe tool was used. The selected study was “The effects of pomegranate supplementation on biomarkers of inflammation and endothelial dysfunction: A meta-analysis and systematic review”. The critical commentary revealed that the consumption of substances derived from pomegranate could help reduce inflammatory biomarkers, as well as serum lipid levels and blood pressure. Future studies are necessary to establish a recommended dose, as a complementary aid to pharmacological treatment.Ítem Acceso abierto Antioxidant capacity and sensory analysis of an ice cream made with prickly pear (opuntia ficus-indica l.) and tumbo (passiflora tripartita kunth)(Universidad Privada Norbert Wiener, 2022-10-17) Salazar Mendoza, Gabriela; Inocente Camones, Miguel AngelObjective: Evaluate the antioxidant capacity and overall acceptability of an ice cream made from a mixture of prickly pear (Opuntia ficus-indica L.) and passion fruit (Passiflora tripartita Kunth). Methodology: For the formulation and preparation of the ice cream, unit operations were performed according to the investigators' procedures under the parameters of Peruvian Technical Standards. Sensory analysis was carried out among ice cream consumers, evaluating appearance, taste, color, smell, and general acceptability using a Likert scale. The antioxidant capacity was evaluated using a spectrophotometric method with the DPPH radical. Phenolic compounds were analyzed according to the method described by Sánchez et al. (2013), Hernández et al. (2019), and Kim et al. (2019), using the Folin-Ciocalteu reagent and UV-visible spectrophotometry. Results: For taste, Sample No.1 (59%) had the highest acceptance, Sample T2 (37%) had the lowest, and Sample T3 (42%) showed a significant number of "liked it quite a lot". Santa Rosa del Sauce, SJL 2024. La metodología que se empleó fue hipotético-deductivo, enfoque cuantitativo, un diseño no experimental, analítico y transversal. Para recabar los datos se aplicó el cuestionario, a una población compuesta por 121 estudiantes. Los resultados que estadísticamente existe una relación entre el estado nutricional y la calidad de vida en escolares, como se demostró de acuerdo a la prueba de Spearman, pues los resultados afirman una correlación negativa alta de -0.797 y el p-valor es de 0.000. Por ende, se ha concluido en la aceptación de la hipótesis alterna del estudio. Se recomienda implementar programas de educación nutricional dirigidos a padres y escolares, enfocados en la importancia de una alimentación balanceada y su impacto en la calidad de vida. A hypothetical deductive method was used, as well as a type of research applied with a correlational level and a non-experimental approach in a sample of 130 postpartum mothers who responded to the corresponding questionnaires, which met the validity and reliability processes necessary for data collection. The main results showed a significance of less than .05; as well as a coefficient of .916 that allowed us to conclude that there is a statistically significant relationship between the educational material on the knowledge and practices of successful breastfeeding in postpartum women of newborns at the San Bartolomé Hospital, Lima 2023.Ítem Acceso abierto Association between anemia and childhood violence in homes with children under 5 years old, Lima-2019.(Universidad Privada Norbert Wiener, 2021-01-12) Guardia Cueva, Pedro Anthony; Lozada Urbano, Michelle FatimaPurpose: The study aimed to assess how child violence affects anemia in households with children under five years old. The study was cross-sectional, using the database from the Demographic and Family Health Survey (ENDES) 2019. Independent variables evaluated included the prevalence of emotional, physical, and sexual violence inflicted by caregivers on minors. On the other hand, the dependent variable was the incidence of anemia. Results: The findings indicated that 51% of boys suffer some type of violence: physical (556/18), psychological (556/340), or both (556/198). Similarly, 49% of girls suffer some type of violence: physical (535/11), psychological (535/344), or both (535/180). Regarding children with anemia who suffer from physical (284/4), psychological (284/195), or both types of violence (284/85), no association between violence against children and anemia was demonstrated (p>0.00). Conclusion: The study did not demonstrate an association between child violence and anemia.
