El objetivo de esta investigación es: Determinar la relación que existe entre alimentos exógenos que activan el factor nuclear eritroide 2 y el estrés oxidativo en pobladores del caserío San Juan, Íllimo-Lambayeque 2023. Metodología: Diseño de investigación no experimental, tipo de estudio correlacional, de corte transversal. La muestra estuvo conformada por 132 pobladores, la recolección de datos se realizó mediante un cuestionario, aplicando el instrumento de escala tipo Likert. Resultados: los resultados de la prueba de hipótesis general reportaron que el nivel de significancia fue de p= 0,019 (p<0,05), se concluyó que existe relación significativa entre los alimentos exógenos que activan el factor nuclear eritroide 2 y el estrés oxidativo.Publicación Acceso abierto Conocimiento materno sobre loncheras saludables de niños menores de 5 años en la Institución Educativa 2039 Jorge Víctor Castilla Montero del distrito de Independencia - Lima 2024(Universidad Privada Norbert Wiener, 2025-06-20) Bazán Alcántara, Katya Alessandra; Villanueva Rivera, Aylin Mishel; León Cáceres, Johanna del CarmenObjetivo: Medir el nivel de conocimiento materno sobre loncheras saludables en la I.E. 2039 Jorge Víctor Castilla Montero del Distrito de Independencia, Lima 2024. Materiales y métodos: El método de la investigación fue mixto, el enfoque de la investigación descriptivo, el tipo de investigación que se usó fue no experimental de diseño corte transversal. En el estudio se evaluó a 106 madres de la I.E. 2039 Jorge Víctor Castilla Montero del Distrito de Independencia las cuales cumplieron con los requisitos de exclusión e inclusión. La técnica utilizada para la recolección de los datos fue una encuesta virtual, la cual constaba de 20 preguntas. Resultados: Entre los hallazgos más importantes se evidenció que el 43% de las madres tenía un conocimiento medio en el nivel global de conocimiento sobre loncheras saludables, mientras que un 22% mostraron un nivel alto y un 35% un nivel bajo. Por otro lado, en los conocimientos generales sobre las loncheras saludables se encontró que el 68% de madres poseía un nivel alto; el 25%, un nivel medio; y el 8% un nivel bajo. Referente a los conocimientos sobre los alimentos energéticos, proteicos y grasos, se obtuvo entre los porcentajes más resaltantes un 67% nivel medio, 57% nivel alto y 100% nivel alto respectivamente. Chiclayo 2023(Universidad Privada Norbert Wiener, 2024-09-30) Cortez Sosa, Daniela; Paico Delgado, Aydee Roxana; Respicio López, Patricia MilagrosLa investigación se centra en el estudio del consumo de alimentos saludables y su efectividad en pacientes con diabetes mellitus tipo II en el distrito José Leonardo Ortiz, Chiclayo. Esta enfermedad crónica requiere un manejo cuidadoso de la alimentación para controlar los niveles de glucosa en sangre y prevenir sus complicaciones. El objetivo del estudio fue evaluar la relación entre el consumo de alimentos saludables y su efectividad en pacientes con diabetes mellitus tipo II en el distrito José Leonardo Ortiz, Chiclayo, en el año 2023. La investigación se enmarca metodológicamente en un enfoque cuantitativo, utilizando un diseño metodológico descriptivo transversal. La población de estudio está conformada por 115 pacientes con diabetes tipo II. Se recopilaron datos sobre el consumo de alimentos saludables, el control de glucosa y las complicaciones asociadas. En los resultados, indica que no hubo relación entre el consumo de alimentos saludables en las dimensiones: recomendaciones nutricionales, consumo de vegetales, consumo de proteínas y la efectividad en pacientes con Diabetes mellitus tipo II, sin embargo, en el análisis de chi-cuadrado indica que si existe una relación estadísticamente significativa entre el consumo de alimentos saludables en su dimensión consumo de carbohidratos y la efectividad en pacientes con Diabetes mellitus tipo II. Se concluyó que el consumo de alimentos saludables en la dimensión consumo de carbohidratos es el único relacionado con la efectividad en pacientes con Diabetes mellitus tipo II, por lo tanto, estamos determinado que en esta población los pacientes con diabetes no se están haciendo un control y seguimiento oportuno de su enfermedad, se recomienda que el Ministerio de salud junto con centros de salud formen alianzas estratégicas, para que los profesionales de salud puedan intervenir en el primer nivel de atención para ayudar a que estos pacientes puedan evitar llegar a las complicaciones.Publicación Acceso abierto Consumo de grupos de alimentos en trabajadores de una empresa de transportes en Pachacutec, Ventanilla, 2025(Universidad Privada Norbert Wiener, 2025-10-02) Flores Condor, Zoila Yelina; Mauricio Alza, Saby MarisolIntroducción: los trabajadores conductores de transportes disminuyen su actividad física propio de la profesión a la que se dedican, los horarios alterados y la poca disponibilidad de alimentos y entornos poco saludables podría afectar la calidad de vida afectando su salud y nutrición. Objetivo: Determinar el consumo de grupos de alimentos en los trabajadores de una empresa de transporte en Pachacútec Ventanilla,2025. Materiales y métodos: Se realizó de un estudio descriptivo, no experimental, transversal y prospectivo. La muestra estuvo conformada por 40 conductores, a quienes se les aplicó una encuesta estructurada sobre el consumo diario de alimentos, considerando los grupos de lácteos, cereales, frutas y verduras. Resultados: el 60% de los encuestados consumió un vaso diario de leche o yogurt, mientras que el 27.5% no los consumía. El consumo de cereales, el 95% reportó consumo moderado destacando el pan o tostadas (87.5%) seguido del arroz y pasta (87.5%). Las frutas fueron consumidas mayormente en una porción diaria, especialmente mandarina, manzana, naranja y plátano; sin embargo, hubo frutas como la papaya o la sandía que presentaron niveles importantes de no consumo. Para verduras, el 77.5% reportó una porción diaria de frescas y el 70% de cocidas, el jugo de verduras fue poco consumido, con un 60% que no lo incluyó en su dieta. Conclusiones: El consumo de cereales fue moderado, mientras que la ingesta de frutas, verduras y lácteos fue baja, lo cual podría representar un riesgo nutricional a largo plazo en esta población laboral.Publicación Acceso abierto Diseño y validación de material educativo “Menú Saludable” aplicado en el Comedor Autogestionario Roberto Gamboa. Metodología: Se trata de una investigación descriptivo y observacional con un enfoque cualitativo, cuasi experimental, transversal y prospectivo. En una población de 30 beneficiarias del Comedor Autogestionario Roberto Gamboa en Lima-Perú se realizaron sesiones educativas para validar el material educativo diseñado aplicando un Test al inicio y final de la misma. Resultados: el grupo etario más prevalente lo constituyen las beneficiarias mayores de 60 años (36.66%), el 86.66% tienen como nivel de instrucción la educación primaria. Se realizó una prueba piloto en donde el 100% validó adecuado los ítems Atracción, Comprensión y Afinidad. The GRADE system was used to assign the strength of recommendations. Results: Ten scientific articles were selected, with 30% from Peru, another 30% from Mexico, 20% from Spain, and 10% from Colombia and Chile. The selected articles were mostly quasi-experimental, with 40% from Mexico, Colombia, and Peru; pre-experimental studies (20%) from Spain and Peru; systematic reviews (10%) from Spain; controlled trials (10%) from Mexico; experimental studies (10%) from Mexico; and quasi-experimental studies (10%) from Chile. These studies indicate that educational interventions are highly effective for school-age children, enhancing their knowledge of healthy eating. Materials and Methods: This study adopted a quantitative approach, with a pre-experimental and longitudinal design. The sample consisted of 25 mothers from the Patricia Teresa Rodríguez 3019 School – UGEL 02 Rímac. The instrument used was a questionnaire, and the data were processed using the Excel program, with descriptive statistics applied. Results: Before the educational intervention (EI), 52% (13) of the mothers had a low level of knowledge about healthy lunchboxes; after the EI, 100% (25) reached a high level. Before the EI, 68% (17) had a low level of knowledge about types of foods; after the EI, 96% (24) reached a high level. Before the EI, 56% (14) had a low level of knowledge about healthy lunchbox preparation methods, and 44% (11) had a medium level; after the EI, 100% (25) reached a high level. Before the EI, 64% (16) had a low level of knowledge about the contents of healthy lunchboxes; after the educational intervention, 100% (25) of the mothers achieved a high level. Materials and Methods: The search was carried out in Scielo, Lilacs, Lipecs, Medline, the information was oriented using the keywords effectiveness, educational program, knowledge, practices, food and nutrition. Where original articles published in journals were found between January 2006 and September 2016. Of a total of 25 articles, 10 articles that met the eligibility criteria were analyzed, including experimental, pre-experimental and quasi-experimental studies that met the inclusion criteria. and exclusion. The levels of evidence and strength of recommendation were then evaluated. Results: In the final selection, 10 were chosen, we found that 100% (n=10/10) of them affirm that the educational programs aimed at parents are effective in knowledge and practices about healthy eating. Materials and methods: The 10 articles reviewed on the effectiveness of physical activity combined with a healthy diet for weight reduction in adults with overweight and/or obesity were sourced from: Scielo (10%), PubMed (20%), and Cochrane (70%). All studies were of high evidence quality, with 80% being systematic reviews and meta-analyses, and 20% being randomized controlled trials. The studies originated from Chile (10%), Norway (10%), Canada (10%), Japan (10%), Spain (10%), and the United States (50%). The reviewed studies recommend preventing overweight in adults by reducing sugar and salt intake, increasing fiber consumption, engaging in physical activities that promote movement, and reducing sedentary behavior in overweight adults. Results: 100% of the articles indicate that a healthy diet combined with physical activity is more effective for weight reduction in adults with overweight and/or obesity. Material and Method: The systematic review of the 10 scientific articles identified by degree of evidence according to Grade found on the effectiveness of the use of foods and beverages fortified with multiple micronutrients for the reduction of anemia in children, were found in the Cochrane databases. Scielo, Medline, Pubmed. The articles reviewed are from: Ivory Coast 10%, Brazil 10%, China 10%, Cambodia 10%, Vietnam 10%, Republic of Mali 10%, United Kingdom 10%, Philippines 10% and India 10%. Results : Of the 10 articles reviewed, 90% (9/10) correspond to the randomized methodological design and the 10% (1/10) to systematic review. Of the 10 articles systematically reviewed, 70% (7/10) evidence the effectiveness of the use of foods and beverages fortified with multiple micronutrients to reduce anemia in children. Material and methods: The Systematic Review [SR] with an observational and retrospective research design that synthesizes the results of 18 indexed scientific articles to answer the problem question of the present study. The algorithms and Boolean operators used were: primary level schoolchildren AND children, healthy eating OR nutrition, physical activity OR physical education, program OR intervention OR education. Results: Of the 18 scientific articles reviewed, 55% were from Spanish journals and the remaining 45% were from American journals (Chile, Mexico, Venezuela and Cuba). The country with the highest number of scientific articles on our continent is Mexico with 4 articles (22%). According to the design and type of study, 61% had a quasi-experimental design (n=11/18), only 11% were experimental, with approximately one-fifth (22%) of the studies being cross-sectional (n=4/18). 18).Conclusion: Among the most relevant findings, the educational intervention program on healthy eating and physical activity for primary school students is effective in increasing knowledge of healthy eating and physical activity, however, there is insufficient evidence. to show that they decrease overweight in primary school students.Ítem Acceso abierto Impacto de la ley de promoción de alimentación saludable: octógonos, en los hábitos de consumo y compra de alimentos y bebidas procesados en los trabajadores de la empresa Suiza Lab, Lima, 2023(Universidad Privada Norbert Wiener, 2023-07-20) Valdera Pantaleon, Ivi del Rocio Aquilina; Lujan Torrealva, Franco SilvioGeneral Objective: To determine the impact of the Healthy Food Promotion Law – Octagons, on the consumption and purchase habits of processed foods among workers at SUIZA LAB. Materials and Method: The research is cross-sectional, non-experimental, and descriptive, with a quantitative approach. A questionnaire with 15 questions was used to gather information on: public appreciation of the Healthy Food Law and the use of octagons, perception and attitudes toward warning labels on processed foods and beverages, influence of nutritional labeling on food and beverage consumption decisions, and knowledge of warnings and/or changes in processed food and beverage consumption habits. Results: Most of the surveyed workers are active consumers of processed foods and beverages (77%). Regarding the frequency of processed food and beverage consumption, sodas, cookies, and chocolates were consumed most frequently, with 62%, 58%, and 42% consuming them more than once per day, respectively. Additionally, 75% of the workers surveyed compare the number of octagons on packages before purchasing. Conclusion: The majority of workers are active consumers of processed foods and beverages. Objective: Establish the relationship between knowledge about healthy eating and the nutritional status of patients undergoing hemodialysis at the Cayetano Heredia hospital, Lima - 2021. Methods: the research is quantitative, non-experimental, descriptive, correlational and transectional. A non-probabilistic sample will be taken for convenience or intentionally from 80 patients who are receiving hemodialysis treatment, 3 times a week for 3 to 4 hours a day in the Hemodialysis area of the Cayetano Heredia Hospital. Through the survey, a validated and reliable instrument will be applied to determine the level of knowledge and through documentary analysis of the medical records, the different clinical parameters of the patient's nutritional status will be taken. A deductive design methodology with a quantitative approach and a descriptive, non-experimental research design was used. The sample consisted of 40 mothers who are members of the Popular Dining Hall in AA.HH. 28 de Julio, Campoy – Lima. The results showed that 62.50% demonstrated a medium level of knowledge about healthy eating, followed by 22.55% with high levels, and only 15% with low levels. Regarding attitudes, 69.25% (n=28) had a positive evaluation by agreeing with healthy eating, while only 5.5% (n=2) strongly agreed, and 5.5% (n=2) disagreed. Meanwhile, 19.75% (n=8) had a neutral evaluation. This research focuses on determining the relationship between lifestyles and the level of cardiovascular risk in nursing professionals in the ICU of Huancayo in 2024, aiming to identify lifestyle patterns and assess cardiovascular risk levels. The methodology includes non-experimental research with a qualitative approach, working with 100% of the nursing population in the ICU without sampling. Validated questionnaires will be used to collect data, and the cardiovascular risk calculator will be employed. Central tendency analysis, Spearman and Pearson correlation, and regression analysis will be conducted. Los resultados fueron que la mayoría consumen lo suficiente 57.7% (86) y una minoría no consume lo suficiente en un 42.3% (63) de frutas y verduras en los adolescentes participantes, la mayoría son de género femenino en un 57.7% (86) y una minoría de género masculino en 42.3% (63), y la mayoría tiene 13 años principalmente en un 37.6%; por lo que la correlación de Pearson es positivo directo muy fuerte de 0.985 y nivel de significancia de p = 0,002, Concluyendo que hay relación de variables positivo y fuerte.Publicación Acceso abierto Prácticas de alimentación saludable y nivel de hemoglobina en niños de 6 a 36 meses que acuden al Centro de Atención Primaria II de Nasca, 2024(Universidad Privada Norbert Wiener, 2024-10-21) Sotaya Barreda, Paola Mercedes; Millones Gomez, Segundo GermanObjetivo: Determinar la relación entre las prácticas de alimentación saludable y nivel de hemoglobina en niños de 6 a 36 meses. Materiales y métodos: Se empleó el método hipotético-deductivo, investigación aplicada con diseño no experimental y enfoque cuantitativo. La población fue conformada por 90 madres que tenían niños con edades comprendidas entre 6 y 36 meses, la muestra fue censal, se empleó un cuestionario sobre prácticas de alimentación saludable y la técnica de observación en el libro de seguimiento de niños de 6 a 36 meses. Resultados: Destacan las buenas prácticas saludables con 77,8 % y las malas 22,2 %. Respecto al nivel de hemoglobina, el 75,6 % presentaron niveles normales, mientras que un 23,3 % tuvo anemia leve y solo un 1,1 % tuvo anemia de nivel moderado. Conclusiones: Existe relación significativa entre las prácticas de alimentación saludable y nivel de hemoglobina en niños de 6 a 36 meses con una significancia de 0,012 y valor de Rho de Spearman igual a 0,264.
