    Acceptability and antioxidant capacity of a blueberry beverage formulation in Norbert Wiener University students in 2021.

    This project had 2 phases. In the First, a survey model was carried out that, through a 5-point hedonic scale corresponding to smell, flavor and texture, is capable of determining which of the 3 formulations presented is the most accepted (F1 = 65%, F2 = 70% F3 = 55%).In the second phase I carry out an analysis of the antioxidant capacity in trolox equivalents to the winning formulation (F2=70%) resulting from the sensory evaluation survey. The sample was evaluated in the Molina total quality laboratories of the Universidad Nacional Agraria La Molina and the points to be evaluated were antioxidant capacity and total anthocyanins. Then the results were as follows: antioxidant capacity was obtained with a measurement of 753,941 ± 33,177 µmol TROLOX eq./g. sample and regarding the total anthocyanin count, the results were 5.79 ± 0.03 in mg./100g. In conclusion, the results obtained from the sensory acceptability test applied to the three blueberry drink formulations determined that formulation No. 2 was the winner, after which the antioxidant capacity and total anthocyanins of the sample were found. No. 2, the results of the first compound far exceed similar formulations (by more than 500%), while in the second compound a concentration greater than 50% is observed. Finally, the study shows us that formulation No. 2 is the most acceptable in a university population and in turn said drink has large quantities of the compounds analyzed during its first hours of production.

    Análisis de la capacidad antioxidante y vitamina C de la pulpa de sanky, corryocactus brevistylus, proveniente de dos departamentos del Perú

    Objetivo General: Analizar la capacidad antioxidante y el contenido de vitamina C de la pulpa de la fruta Sanky, Corryocactus brevistylus, proveniente de dos departamentos del Perú. Material y Método: Las muestras de la fruta Sanky, Corryocactus brevistylus, fueron obtenidas de los departamentos de Arequipa y Ayacucho y trasladados en cadena de frio al laboratorio en Lima, para el análisis físico - químico. Además, para el recojo de dicho fruto, se esperó la temporada de cosecha, los meses de junio y julio 2023. Para dicho análisis físico - químico de la fruta Sanky, proveniente de dos departamentos del Perú, se plantea una hipótesis bilateral. Se quiere demostrar la diferencia significativa en ambas muestras para inferir estadísticamente los resultados mediante el uso del software estadístico RStudio. Resultados: Se determinó por medio de análisis físico-químico, la capacidad antioxidante, Vitamina C, pH y grados brix dando los siguientes resultados: Muestra de Arequipa, capacidad antioxidante: 62387 exp. En micromol de trolox/100g. y en la muestra de Ayacucho, fue en promedio 52661.9 micromol de trolox/100g. La vitamina C para la muestra de Arequipa fue de 31mg/100g. Y en la muestra de Ayacucho en promedio fue 30mg/100g. En el pH en la muestra de Arequipa fue 3.2 y la muestra de Ayacucho en promedio fue de 3.1. Finalmente, en los sólidos solubles en promedio para la muestra de Arequipa fue 5.4 y la muestra de Ayacucho fue de 5.8 respectivamente. Conclusiones: El estudio se realizó en muestra fresca de la pulpa de la fruta Sanky, Corryocactus brevistylus, según la hipótesis planteada a un 95% de confianza se infiere que hay diferencia significativa en las dos muestras de la fruta Sanky procedente de los departamentos del Perú. La capacidad antioxidante y la vitamina C es mayor en la muestra de Arequipa que en la muestra de Ayacucho. En cuanto al pH en la muestra de Arequipa es ligeramente mayor al de Ayacucho. Sólidos solubles (Grados Brix) es ligeramente mayor en la muestra de Ayacucho que el de Arequipa.

    Analysis of the content of arsenic, lead, and cadmium in roots and leafy vegetables from the wholesale market of Lima, Peru - 2023

    Objective: To evaluate the content of heavy metals in roots and leafy vegetables from the wholesale market of Lima in 2023. Methodology: A quantitative, analytical, and cross-sectional approach was used. Samples of potato, carrot, lettuce, and spinach (500g each) were collected from the wholesale market in Lima, Peru, in 2023. AOAC analysis methods were applied for each heavy metal. A 95% confidence level was used to determine whether the concentrations of contaminants exceeded the established limits. The Wilcoxon non-parametric test was used with a p-value of 0 and a significance level of 5%. Results: The statistical test confirmed that the presence of heavy metals was below the established limits. The p-value was 0 at a 5% significance level, confirming that the median concentrations of arsenic, lead, and cadmium in the tested vegetables were lower than the maximum allowed by regulations. Conclusions: The analysis of arsenic, lead, and cadmium content in the roots and leafy vegetables from the wholesale market of Lima, Peru, in 2023 showed that the concentrations were lower than the national regulatory limits. Further studies should be conducted in other areas or in soils contaminated by mining activity, and it is recommended to acquire food from batches sold at the point of origin for comparison.

    Caffeine and total sugars in energy drinks sold in supermarkets in Chosica,2023

    Energy drinks are very popular among young people. Their main ingredients include caffeine and sugar, but previous studies have shown differences between the amount of caffeine and total sugars in the product compared to the amount declared on the label. Methodology: The study population included 10 energy drinks. Two data collection forms were used. Results: Regarding caffeine, it ranged from 28.95 to 78.48 mg/100ml, with 50% exceeding the maximum caffeine limit (>35mg/100ml), and 80% exceeding the declared value on the label. Regarding total sugars, it ranged from 0 to 9.50 g/100ml, with 60% exceeding the maximum sugar range in drinks (≥5g/100ml). Conclusion: Energy drinks contain high amounts of caffeine and total sugars, exceeding the values set by NTP 103.003.2022 and Law No. 30021. Most also do not comply with the declared content on the label, with the Monster Energy Ultra Sugar-Free drink being the most concerning as it contains four times more caffeine than indicated.

    Composición nutricional, capacidad antioxidante y análisis sensorial de una formulación de pan de trigo con sustitución parcial de harina de cúrcuma

    Objetivo: Analizar la composición nutricional, capacidad antioxidante y análisis sensorial de una formulación de pan de trigo con sustitución parcial de harina de cúrcuma. Metodología: Este proyecto se llevó a cabo en dos etapas. En la primera, se empleó un método analítico con el fin de usar la experiencia directa para obtener datos que pudieran ser validados mediante análisis estadísticos. Para comenzar, se creó una encuesta con una escalada hedónica de 9 puntos, lo cual permitió determinar cuáles atributos de color, olor, sabor y apariencia fueron los más preferidos entre las dos formulaciones de pan con sustitución parcial de harina de cúrcuma: Muestra A (2% de cúrcuma) Muestra B (4% de cúrcuma). Como segunda etapa de este proyecto, se utilizó un método experimental para realizar un análisis de la capacidad antioxidante, medida en equivalentes Trolox, de la formulación con más puntos a favor de la evaluación sensorial. Resultados: Mediante un análisis descriptivo y exploratorio, se determinó que la Muestra A, con un 2% de harina de cúrcuma, es ligeramente más aceptada que la Muestra B, con un 4% de harina de cúrcuma. Esto se debe a que la Muestra A obtuvo una mejor aceptabilidad en términos de olor, color y apariencia. Sin embargo, en el atributo de sabor, ambas formulaciones empataron. Además, la composición nutricional de las dos formulaciones con sustitución parcial de harina de cúrcuma ofrece numerosos beneficios en comparación con el pan tradicional. Como resultado final, la formulación con un 2% de harina de cúrcuma fue seleccionada para el análisis de la capacidad antioxidante. Este análisis se llevó a cabo en los laboratorios de Calidad Total de la Universidad Nacional Agraria La Molina. Después de 8 días, los resultados indicaron una capacidad antioxidante de 112763,9 µmol TROLOX eq. / 100 g de muestra. Conclusión: Los resultados de la evaluación sensorial aplicada a las dos formulaciones de pan con sustitución parcial de harina de cúrcuma reveló que la formulación con un 2% de harina de cúrcuma fue preferida en términos de color, olor y apariencia sin embargo a la población que degustó ambas formulaciones el atributo sabor les pareció agradable para ambas formulaciones obteniendo un empate con ese atributo. En conclusión, la Muestra A con un 2% de sustitución parcial de harina de cúrcuma, fue la que obtuvo una mayor aceptabilidad en los 4 atributos presentados por sus características organolépticas entre los estudiantes de la universidad, una vez de ser sometida a la prueba sensorial y obtener los resultados se determinó la capacidad antioxidante de la formulación al 2% y que demostró una buena fuente de antioxidante que hace gran diferencia beneficiosa a comparación del pan tradicional por lo que la finalidad de esta formulación es para contribuir a una dieta rica en antioxidantes pero sobre todo para que la población tenga una alternativa mucho más beneficiosa.

    Contenido de azúcar, sodio y grasas saturadas en el rotulado nutricional en snacks y bebidas no alcohólicas que se expenden en la ciudad de Lima Metropolitana, en el año 2018

    Introducción: Los alimentos clasificados como snacks pueden ser perjudi-ciales y traer consecuencias adversas a la salud. El azúcar, el sodio, las grasas saturadas y las grasas trans forman parte de las sustancias cuyo consumo se recomienda reducir. Objetivos: Cuantificar el contenido de azúcar, sodio y grasas saturadas que se declaran en el rotulado nutricional de productos vendidos en supermercados. Métodos: Estudio descriptivo para el que fue-ron seleccionados 200 productos, los cuales se clasificaron en cuatro grupos: snacks de cereales, snacks de tubérculos, snacks de frutos secos y bebidas no alcohólicas. Resultados: Luego de la evaluación del contenido de azúcar, sodio y grasas saturadas declarados en el rotulado nutricional, los resultados muestran que, en promedio, las bebidas no alcohólicas contienen 8,9 g de azúcar/100 ml, y más del 40% supera los 10 g de azúcar por cada 100 ml de producto. El contenido promedio de azúcar en snacks de cereales fue de 22,06 g/100 g y el de sodio fue de 311,91 mg/100 g; asimismo, el 70% de estos productos contiene más de 10 g de azúcar por cada 100 g de producto. Para la muestra de snacks de frutas y frutos secos, la cantidad promedio de azúcar fue de 12,6 g/100 g y la de sodio, 250,6 mg/100 g. El contenido promedio de grasa saturada en snacks de tubérculos fue de 10,2 g/100 g y el de sodio fue de 451,00 mg/100g; además, el 60% de estos productos supera los límites máximos de sodio permitidos por la norma peruana para nutrientes críticos (400 mg por cada 100 g de producto). Conclusiones: Las bebidas no alcohólicas tienen elevado contenido de azúcar en un tercio de ellas, mientras que la cantidad de sodio se encuentra por debajo de los límites establecidos para este grupo de alimentos. En cuanto a los snacksde cereales, el aporte de azúcar excede las recomendaciones, al igual que el aporte de grasas saturadas. Los snacks de frutos secos superan las recomen-daciones para el contenido de azúcar y la tercera parte excede los niveles permitidos de sodio. En la muestra de los snacks de tubérculos, menos del 50% de estos productos analizados excede los valores permitidos para el contenido de sodio, lo que sugiere la necesidad de continuar los esfuerzos para mejorar la salud pública.

    Critical review: dietary intake changes in breast cancer patients receiving chemotherapy

    Breast cancer is a disease that is characterized by the uncontrolled growth of cells. Most cancers form a mass called a tumor. This alteration makes it difficult for the body to function properly. Breast cancer can start in different parts of the breast: there are ductal, lobular and other less common cancers such as phyllodes and angiosarcoma. The search was carried out in a systematic computerized way in the search engines ELSEVIER, PUBMED, HINARI, COCHRANE, SCIELO, GOOGLE ACADÉMICO, DIMENSION, SCIENCEDIRECT, where the key words used in the search were dietary intake, changes in intake, perception of foods, chemotherapy and breast cancer. Types of study were included: clinical trials, cohorts and cases and controls, patients over 18 years of age, of both genders, with breast cancer, with chemotherapy treatment were included. The results that were measured: the side effects of chemotherapy can affect food intake in both quality and quality, finding that there are significant changes in protein foods (P <0.001), fat (P <0.001), MUFA (P <0.001), phosphorus (P <0.001), sodium (P <0.001) and tryptophan. Likewise, it was found that the majority of patients experience nausea, vomiting, changes in taste and smell, which causes a reduction in food intake. It was concluded that chemotherapy has negative effects that harm the quality of life and health status of patients.

    Critical review: effect of lycopene supplement consumption in reducing prostate cancer risk factors in adults older than 50 years

    Studies suggest that lycopene supplementation in patients at risk for prostate cancer may reduce Prostate Specific Antigen (PSA) levels. The following secondary research is presented, which is a critical review and is titled Effect of lycopene supplement consumption on the reduction of risk factors for prostate cancer in adults over 50 years of age, its purpose was to investigate the role of lycopene in patients at risk of prostate cancer. The clinical question was: Will the consumption of lycopene supplements reduce the risk factors for prostate cancer in adult patients? The model used (NuBE) Evidence-Based Nutrition. The information was investigated in the search engines SCIELO, SCOPUS, SCIENCE DIRECT, PUBMED, MEDLINE, COCHRANE LIBRARY, having 37 articles in the database, of which 11 were chosen and analyzed using the CASPE critical reading tool, selecting the Essay Randomized Clinical Trial titled “Effect of lycopene supplementation from different sources on prostate-specific antigen.” (PSA): a systematic review and meta-analysis of controlled and randomized trials”, which has a level of evidence AII and Grade of Strong Recommendation, in relation to the researcher's expertise. The critical comment admitted that there is no significant effect in reducing PSA levels when supplementing lycopene to patients at risk of prostate cancer.

The present secondary research titled as a critical review: EFFECT OF SUPPLEMENTATION WITH OMEGA 3 FATTY ACIDS ON CLINICAL AND NUTRITIONAL PARAMETERS IN PATIENTS DIAGNOSED WITH PANCREAS CANCER aimed to provide a professional critical commentary on the topic of the effect of oral supplementation enriched with omega 3 EPA and to help with the clinical and nutritional parameters of patients diagnosed with pancreatic cancer.

    Critical review: effect of the low Fodmap diet in the treatment of Irritable Bowel Syndrome.

    Irritable Bowel Syndrome (IBS) is a functional digestive disorder characterized by abdominal pain and changes in stool frequency or consistency. The etiology is unknown. There are four IBS subtypes, resulting from the interaction of various factors. There are no direct diagnostic tests for IBS, and treatment focuses only on symptom management. Methodology was described based on Evidence-Based Nutrition (EBN), using its five phases for critical reading. Articles from systematic reviews and clinical case studies of IBS patients were selected, utilizing global search engines such as Google Scholar, PubMed, and ScienceDirect. A review article titled "Efficacy of Low FODMAP Diet Compared to Low Lactose Diet in IBS Patients: A Randomized Cross-Over Trial" by Krieger et al. was reviewed. IBS patients, regardless of lactase deficiency, showed significantly reduced scores after both diets, with no significant differences between them. Both diets resulted in less impact on daily life for patients compared to before the study. The daily evaluation showed that IBS patients on the low FODMAP diet reported significantly less abdominal pain and bloating than those on the low lactose diet.

    Critical Review: Effect of the nutritional intervention of the Mediterranean diet in the treatment of patients with non-alcoholic fatty liver disease

    Non-alcoholic fatty liver disease is a prevalent disease affecting 25% of the world population, distinguished by the presence of fat vacuoles, especially triglycerides in the liver, greater than 5% in patients without alcohol consumption and in the absence of other causes of liver disease. These long-term inflammatory changes can progress to liver cirrhosis. Consequently, a nutritional intervention with a Mediterranean diet, but with calorie restriction, has a lot of significance for the components of the diet exactly because of the protective effect of antioxidants. The present secondary research entitled as a critical review: Effect of the nutritional intervention of the Mediterranean diet in the treatment of patients with non-alcoholic hepatic steatosis, had the objective of exposing, through a professional critical commentary, the positive impact of the nutritional intervention with the Mediterranean diet in the treatment of adult patients with non-alcoholic hepatic steatosis. The clinical question was: What is the effect of nutritional intervention with a Mediterranean diet in the treatment of adult patients with non-alcoholic hepatic steatosis? The Evidence-Based Nutrition (NuBE) methodology was used. The information search was carried out in PUBMED, MEDLINE, SCIELO, SCOPUS, SCIENCE DIRECT, finding 41 articles, 9 being selected that have been evaluated by the CASPE critical reading tool, finally selecting the article titled The effectiveness and acceptability of the diet Mediterranean with calorie restriction in non-alcoholic fatty liver disease (NAFLD), which has a level of evidence I and Grade of Recommendation I, according to the expertise of the researcher. The critical comment approved that there is a positive impact of nutritional intervention with a Mediterranean diet with caloric restriction in the treatment of adult patients with non-alcoholic hepatic steatosis, stopping liver damage and progression to non-alcoholic cirrhosis that is irreversible.

    Critical review: effect of the use of probiotics as a supplement in patients with Alzheimer's

    Alzheimer's AD as a pathology is a degenerative alteration of the central nervous system, which determines a loss of knowledge and reduced cognitive function. Patients with Alzheimer's are at serious risk of developing protein and energy malnutrition, which is associated with increased morbidity and mortality. Some alterations can affect the nutritional status of patients with Alzheimer's, which includes loss of autonomy, disorientation, eating disorders, weight loss and frequent ambulatory activities, and this would lead to progression in the disease. The present review aims to collect information on the use of Probiotics as a supplement in patients diagnosed with Alzheimer's. The clinical question was: What is the effect of using Probiotics through supplements in patients with Alzheimer's? An evidence-based nutrition (NuBE) approach was used. After searching databases such as PUBMED, SCIELO, SCOPUS, SCIENCE DIRECT, 13 articles were found, of which 9 were selected to be evaluated by the CASPE critical reading tool, the selected research was the Randomized Clinical Trial RCT Effect of Probiotics Bifidobacterium Breva in Improving Cognitive Function and Preventing Brain Atrophy in Elderly Patients With Suspected Mild Cognitive Impairment: Results of a Randomized, Double-Blind Study of 24 weeks (PREADVISE) which has a level of evidence AI and Grade of Recommendation I. The critical comment; This study included tests for the timely detection of mild cognitive impairment (MCI) and dementia such as ADAS-jcog and MMSE, which had a positive correlation with respect to supplementation with B. breve MCC1274 in preventing the progression of brain atrophy. After 24 weeks of supplementation, it gives us a broad overview of the nutritional intervention, this research was supported by other results; observational and prospective studies that suggest that the use of Probiotics improves mild cognitive function and the incidence of AD; Likewise, these studies are based more on the benefits of the intestinal microbiota and its relationship with mild cognitive impairment (MCI) and dementia.

    Critical review: Efficacy of ferrous sulfate in iron deficiency anemia in children

    During childhood, different oral iron preparations are they are widely used in iron deficiency anemia (IDA) and prophylaxis. The purpose of this study was to compare the effectiveness of different oral iron preparations in children with Anemia. Eighty-nine children (age range, 1 to 17 years) with Anemian were randomly assigned to receive oral therapy in two divided doses of 5 mg Fe2+/kg/day ferrous sulfate (group FS, n = 45) or ferrous fumarate plus zinc and vitamin C (FZ group, n = 44).     Critical review: ergogenic effect of creatine supplementation in elite athletes

    Nutritional intervention through creatine supplementation is a resource that is used for its potential ergogenic effect, however, there are physiological and dosage factors that would favor elite athletes. The objective of this research was to evaluate the ergogenic effect of creatine supplementation on the physical capabilities of elite athletes, such as strength, speed, power, among others. The clinical question was: What is the ergogenic effect of creatine supplementation? Creatine supplementation in elite athletes? The Evidence-Based Nutrition (NuBE) methodology was used. The information search was carried out in Pubmed, Scielo, Dialnet, Cochrane, Elsevier, finding 327 articles, 50 being selected that have been evaluated by the CASPE critical reading tool, finally selecting the systematic review titled “Effects of creatine supplementation on athletic performance in soccer players: a systematic review and meta-analysis”, which has a level of AI evidence and a strong Degree of Recommendation, according to the expertise of the researcher. The critical comment allowed us to conclude that the use of creatine as an ergogenic supplement favors the performance of the elite athlete.

    Effect of resveratrol supplementation in patients with type 2 diabetes mellitus

    Diabetes mellitus type 2 is a chronic disease that will present multiple complications. The present secondary research titled as a critical review: Efficacy of resveratrol in patients with diabetes mellitus type 2, aimed to determine whether supplementation with resveratrol reduces glucose levels. . The clinical question: What is the effectiveness of resveratrol supplementation in patients diagnosed with type II diabetes mellitus? The Evidence-Based Nutrition (NuBE) methodology was used. The information search was carried out in PUBMED, MEDLINE, SCIELO, SCIENCE DIRECT, finding 54 articles, 10 being selected that have been evaluated by the CASPE critical reading tool, finally selecting the Randomized Clinical Trial titled Supplementation with resveratrol decreases glucose in blood without changing circulating CD14+ CD16+ monocytes and inflammatory cytokines in patients with type 2 diabetes, which has a level of evidence I and Grade of Recommendation I, according to the expertise of the researcher. The critical comment allowed us to conclude that resveratrol supplementation has positive effects on glucose reduction.

    Formulation, nutritional, microbiological composition and sensory analysis of a vegan burger in the year 2023

    In this research work, the analytical method of quantitative approach, basic type, and experimental design was applied. To determine the formulation, the model and process of Capatinta and Cardenas (1) were used. To determine the nutritional and microbiological composition, the formulated product was subjected to laboratory tests, where a sample of 1kg of hamburger was analyzed, which was divided into: 1/2kg for the evaluation of the nutritional composition and 1/2kg for the evaluation of the microbiological composition. A total of 100 25 g hamburger portions were prepared. each one, the same ones that were the sample to carry out the hedonic test on 100 students from the Norbert Wiener University; The data obtained were processed in the SPSS software using descriptive statistics, where four aspects were evaluated: color, smell, flavor and texture with the hedonic test technique of Lawless and Heymann (3). concluding that the final product fulfills two purposes, the first is to be a healthy food option for human consumption; and, the second is to contribute to caring for the planet by reusing food waste.

    Nivel de comprensión referente advertencias publicitarias en etiquetas y su relación con el consumo de alimentos ultraprocesados y el estado nutricional en estudiantes de enfermería Lima – Perú - 2025

    En el 2013, se aprobó la ley N° 30021 con el objetivo de enfrentar la obesidad y el exceso de peso en niños y adolescentes con el fin de prevenir enfermedades a largo plazo, con esta norma se implementaron alertas publicitarias en alimentos que contengan altos niveles de azúcares, grasas saturadas, sodio y grasa trans, siendo aplicables a aquellos productos que superen los límites establecidos. El exceso de consumo de alimentos ultraprocesados conlleva a un estado nutricional de sobrepeso, obesidad u obesidad mórbida con un índice de masa corporal mayor a 40. Objetivo: Analizar el nivel de comprensión referente advertencias publicitarías en etiquetas y su relación con el consumo de alimentos ultraprocesados y el estado nutricional en estudiantes de enfermería Lima - Perú – 2025 – 2025. Material y métodos: Tipo de investigación básica, descriptiva; diseño no experimental, transversal y correlacional; con enfoque cuantitativo; la población estuvo conformada por estudiantes de enfermería. Se elaboraron 2 formularios de recolección de datos; el primero midió el nivel de compresión referente advertencias publicitarias y el consumo de alimentos ultraprocesados, el segundo fue una ficha de recolección de datos antropométricos que determinó el estado nutricional. Resultados: Luego de aplicar el cuestionario se obtuvieron los siguientes resultados; el nivel de compresión promedio fue de 66.5%, bajo 28.5%, alto 5%, en cuanto al consumo de alimentos ultraprocesados tuvieron un consumo bajo de 42.4%, consumo moderado de 27.2% y consumo alto de 30.4%. Por otro lado, con respecto al estado nutricional mediante índice de masa corporal (IMC), el 51.3% tiene un IMC normal, el 27.8% presentó sobrepeso y el 14.6% presentó diversos grados de obesidad. También se midió el perímetro abdominal, siendo el 65.2% con riesgo metabólico bajo, el 20.9% con riesgo alto y el 13.9% con riesgo muy alto. Conclusión: No se halló una relación significativa entre las variables ya que los valores de P resultaron ser superiores a 0.05.

    Preparation of a blueberry drink and effect of its consumption on serum glucose

    The blueberry is a berry native to North America. In Peru, it was reported that blueberry production grew at an average rate of 206% per year between 2012 and 2018. Studies mention the presence of large amounts of anthocyanins, which have important biological activities such as antioxidant, antimutagenic, and hypoglycemic effects. Blueberries also contain flavonoids, which play an essential role in protecting against oxidative damage. The phytochemical composition of blueberries changes depending on their ripening stage, which causes changes in the cell wall, resulting in softening of the fruit, which improves its taste but also makes it more vulnerable to physical and microbiological damage. Ripe blueberries have a very short post-harvest life. Due to the fruit's characteristics, a method is required to extend its shelf life. In South America, studies have shown that nine out of ten people consume sugary drinks daily, with an average intake of about 450 ml per day. In Peru, an annual per capita consumption of 100 liters was reported in 2015, with a trend to grow by about 3% each year. Given the trend of sugary drink consumption, the massive production of blueberries in our country, the premature deterioration of the fruit's surface, and the attributed phytochemical properties, this project aims to formulate a blueberry drink that will be pleasant to the public and evaluated for its effect on serum glucose, compared with other drinks on the market. It will be conducted in two phases: the first involves a sensory evaluation, and the second, a clinical trial related to its consumption.

    Prevalence of child malnutrition and anemia at the ''La Libertad'' health center - Huancayo, in the period of august 2021-august 2022

    The main objective of this study was to estimate the prevalence of anemia and childhood malnutrition in children aged 6 months to 5 years receiving care at the La Libertad-Huancayo health center from August 2021 to August 2022. A basic research study was carried out using a hypothetical-deductive method and a non-experimental design, with a quantitative approach. The sample size for 2021 was 4,075 children, while for 2022, it was 13,133 children in total. Observation forms were used to measure malnutrition and anemia in the children. The main results showed a prevalence with a significance lower than 0.05, as indicated by the Spearman Rho coefficient, allowing the conclusion that there is a relationship between anemia and childhood malnutrition in children aged 6 months to 5 years attending the La Libertad-Huancayo health center from August 2021 to August 2022.

    Revisión crítica: efecto de la arginina en el tratamiento de las ulceras por presión.

    Introducción: la úlcera por presión es la injuria de origen isquémico localizada en la piel y/o en tejidos variando en su tamaño y profundidad, a causa de la presión constante entre dos superficies duras, según la GNEAUPP las ulceras por presión son consideradas como problemas muy comunes en la práctica diaria de enfermería y un gran problema en la salud pública. Jusitifación: Se justifica de acuerdo al impacto clínico que conlleva el efecto del soporte nutricional en el tratamiento y prevención de las úlceras por presión en pacientes hospitalizados el cual genera mayor morbi-mortalidad. Objetivos: El estudio planteo el desarrollo de una revisión crítica de la literatura científica sobre el efecto de la arginina para el tratamiento de las úlceras por presión. Metodología: Es una revisión secundaria, metodología según la Nutrición Basada en Evidencias (NuBE), la búsqueda se ha realizado en español y en inglés, se han tomado en cuenta artículos en inglés, español y portugués, utilizando buscadores globales como DIMENSIONS, GOOGLE SCHOLAR, PubMed y Cochrane Library. Resultados: Se analizó una revisión sistemática de ensayos clínicos aleatorizados en pacientes hospitalizados donde los resultados más importantes fueron que el uso desde 0.85 g hasta 9 g de arginina generaban beneficios en la recuperación de las úlceras por presión, según escala PUSH, tiempo de recuperación y disminución del área de la herida, pudiéndose aplicar a la realización de protocolos o guías de trabajo clínico para el tratamiento de las escaras.
